Berries and risotto make a enticing duo: my risotto ai lamponi (raspberry risotto) and risotto alle more are not only pretty, but also surprising in their ability to deliver a satisfying berry flavor in a savory dish. While I was immediately successful in marrying risotto with two kinds of berries, with a third one, strawberries, I could not strike the right note. I tried three variations, but the result did not satisfy me completely, so I gave up.

Last year, I learned about roasting strawberries and successfully adapted the technique to prepare them for gelato, frittata and, most recently, a version of lassi that uses my homemade kefir. The question then formed in my mind: would roasted strawberries be the ingredient that finally gives me a satisfying risotto con le fragole? The title of the post gives away the affirmative answer.

In this risotto, I finally obtained the strawberry flavor I wanted. Once again, the roasting process with the touch of balsamic vinegar and sugar brings out the berries' flavor. I realize that it also adds to the time requirement for the preparation, but you can roast the berries ahead of time: just remember to warm them up before adding them to the cooking risotto, so they don't cool it drastically.

Vialone Nano, Carnaroli and Arborio are the types of rice I have used to make risotto. My preference goes to the first two, which, unfortunately, are the kinds most difficult to find in the US. If you find some Carnaroli or Vialone Nano at an affordable price, I suggest you try it. If not, you can use Arborio.

Ingredients:

• 12 oz. [340 g] strawberries, organic or pesticide-free
• 1/2 teaspoon balsamic vinegar (aceto balsamico) of good quality
• 1 teaspoon sugar, possibly ultra-fine
• 1/2-1 tablespoon olive oil
• 2 tablespoons minced shallot (scalogno)
• 1 cup [200 g] Vialone Nano, Carnaroli or Arborio rice
• 2 tablespoons [30 ml] white wine, not cold
• 2 cups [475 ml] vegetable broth, possibly homemade + 1 cup [235 ml] water to make a light vegetable broth
• sea salt, to taste
• 2-3 tablespoons freshly grated Parmigiano-Reggiano

Wash strawberries and carve out stem. Place in a bowl, sprinkle  balsamic vinegar and sugar on them, and toss gently. Heat the oven to 350 F. Line a baking sheet with a silicone mat that is wider and longer than the sheet, so no juice can escape from any side. Place strawberries on the sheet on a single layer. Put the baking sheet in the oven and bake for 20 minutes. Let strawberries cool slightly, then cut them (lengthwise) into 4-6 pieces, depending on their size. Set aside a dozen pieces to garnish the bowls at serving time.

Bring broth and water to a simmer in a 1 qt. saucepan and keep it at that temperature (you may not need it all, depending on the variety of rice you use). In a 2 qt. saucepan, warm up olive oil, then add the shallot and stir. Cook for a few minutes until the shallot is translucent, then add the rice.

Toast the rice for one minute, while stirring, then add the wine. Let the wine evaporate, while stirring the rice, then add enough of the simmering broth to barely cover the rice. Allow the rice to absorb most of the broth, then add more broth, a ladleful at a time, letting the rice absorb most of the broth before adding more. Make sure the rice never gets dry, keep it at a lively simmer and stir at regular intervals.

If the strawberries are cold, warm them up (in the microwave, use the defrost option to do this; otherwise, keep the bowl where they are on top of the pan with the broth). Ten minutes after the first addition of broth, pour strawberries and their juice into the pan and stir well. Make sure the rice comes back to a lively simmer. Continue cooking the rice as before, adding simmering broth as needed.

Taste the rice 6 minutes after adding the strawberries: if it feels a bit hard at the core, cook it a minute or two longer, then check again. (The cooking time depends on various factors, including the kind of rice.) If cold, warm up the strawberry pieces you set aside earlier.

Risotto should be soft and creamy, but with some body (slightly al dente). Remove the pan from the heat, add a bit of salt and the cheese and stir well to incorporate. Taste and adjust the salt, if needed. Let the risotto rest, covered, for a few minutes while you gather the guests around the table. Plate and decorate with the strawberry pieces . Serve immediately and enjoy.

Let me say it again: this risotto is worth the extra effort needed to prepare the berries.

Il risotto ai lamponi e il risotto alle more mi venivano bene da un po'. Invece quello alle fragole — provato in tre variazioni — non mi soddisfaceva e quindi ho gettato la spugna.

L'anno scorso, poi, ho imparato a cuocere le fragole al forno e ci ho preparato gelato, frittata e di recente  una versione del lassi che utilizza il mio kefir fatto in casa. Ho pensato: e se  provassi di nuovo a fare il risotto con le fragole? Il risultato finalmente mi ha soddisfatto: in questo risotto sono riuscita ad ottenere la fragolosità che cercavo. La cottura in forno con un pochino di aceto balsamico e zucchero fa risaltare il sapore delle fragole. Mi rendo conto che contribuisce anche ad allungare i tempi di preparazione, ma potete cuocere le fragole in anticipo e poi scaldarle prima dell'uso per evitare che il riso venga raffreddato.

Carnaroli e Vialone Nano sono i tipi di riso che preferisco ma non sono facili da trovare negli USA (e infatti di solito ne metto in valigia un chilo quando vengo in visita in Italia). In caso di carenza del riso preferito, uso l'Arborio.

Ingredienti:

• 340 g di fragole bio o senza pesticidi
• mezzo cucchiaino [2,5 ml] aceto balsamico
• 1 cucchiaino [5 ml] zucchero, possibilmente finissimo
• 1/2-1 cucchiaio [7,5-15 ml] olio d'oliva
• 2 cucchiai [30 ml] scalogno tritato finemente
• 200 g riso Vialone Nano, Carnaroli o Arborio
  
• 2 cucchiai [30 ml] vino bianco non freddo
• 475 ml brodo vegetale + 235 ml acqua per ottenere un brodo leggero
• sale fino, q.b.
• 2-3 cucchiai di Parmigiano-Reggiano appena grattato

Lavare le fragole e privarle del picciolo. Mettere le fragole in una ciotola e aggiungere aceto balsamico e zucchero. Mescolare con delicatezza. Scaldare il forno a 175 C. Foderare una lastra da forno con un tappetino di silicone che sia più lungo e più largo della lastra, in modo che il succo prodotto durante la cottura in forno non finisca sotto il tappetino.

Mettere in forno e cuocere per 20 minuti. (La temperatura in gradi Fahrenheit che uso io, 350, è un po' al di sopra di 175 C e un po' al di sotto di 180 C. Ho deciso di specificare la temperatura più bassa poiché preferisco essere cauta. Potete lasciare le fragole in forno un paio di minuti in più.) Lasciar intiepidire leggermente le fragole. Tagliarle per il lungo in 4-6 pezzi (a seconda di quanto sono grosse). Mettere da parte una dozzina di pezzetti per guarnire il risotto impiattato.

Portare a ebollizione il brodo vegetale leggero e mantenerlo in lieve ebollizione (quanto ne userete dipende dal tipo di riso che usate). In una pentola, scaldarel'olio d'oliva e aggiungere lo scalogno . Cuocere a fuoco basso per qualche minuto, poi aggiungere il riso. Tostare il riso per un minuto, poi aggiungere il vino. Lasciare evaporare il vino, girando il riso, poi aggiungere abbastanza brodo bollente da coprire appena il riso. un mestolo alla volta. Lasciare che il riso assorba la maggior parte del brodo, poi aggiungerne ancora, un mestolo alla volta. Mantenere il riso bagnato col brodo e cuocere, girando ad intervalli regolari.

Se le fragole sono fredde, scaldarle un po' (nel forno a microonde utilizzando la funzione che scongela oppure tenendo la scodella dove sono le fragole sopra la pentola dove bolle il brodo, tipo bagno maria). Dieci minuti dopo la prima aggiunta di brodo, versare le fragole e il loro succo nella pentola del riso e mescolare bene. Riportare il riso a temperatura e continuare a cuocerlo come prima, aggiungendo brodo quando necessita.

Assaggiare 6 minuti dopo aver aggiunto le fragole e se il riso è ancora un po' duro al centro, lasciar cuocere un altro minuto o due, poi assaggiare di nuovo. Se sono fredde, scaldare i pezzi di fragola per la guarnizione. Togliere la pentola dal fuoco e aggiungere il sale secondo il gusto e il parmigiano. Mescolare finché il formaggio è ben distribuito, poi far riposare il risotto, coperto, per alcuni minuti. Impiattare il risotto e guarnirlo con dei pezzetti di fragola. Servire immediatamente e gustare.

Cicerchia (Lathyrus sativus) is a legume that, according to this page (in Italian), was once widely consumed, while nowadays, it is grown only in central Italy.

Cicerchie are available only dried: prior to cooking, they must be soaked for 24 hours and the soaking water must be eliminated because it contains a neurotoxic amino acid (ODAP or BOAA) that can cause lathyrism. This condition was and remains a problem when and where lack of alternative food sources led to consumption of large quantities of Lathyrus. As Hank of Hunter Angler Gardener Cook says in this post: "Make these beans a special treat, not a staple, and you’ll be fine." Our consumption of cicerchie has been occasional and I follow the preparation instructions.

I got the cicerchie in the photo at Bavicchi, the store in downtown Perugia that I mentioned in this and other posts. The reference to Perugia in not accidental. In fact...

Perugia: Fontana Maggiore

our tour of the 20 regions of Italy organized by Trattoria MuVarA brings us to my home region: Umbria. If you're familiar with my blog, you know that I was born and grew up in beautiful Perugia. (This post has a few more photos of the city in the heart of Italy.)

My presentation of legumes that are traditional of Umbria already includes lenticchie di Castelluccio, fagiolina del Lago Trasimeno and roveja. To prepare cicerchia, today's legume, I consulted the repository of traditional Italian recipes, the Accademia Italiana della Cucina and there I found an Umbrian recipe for minestra di cicerchie. The English version of the recipe is available in the book by the Academy called La Cucina: The Regional Cooking of Italy. According to the recipe headnote, cicerchie were a popular legume among Umbria peasants. As always, I altered the recipe to adjust it to my taste and then prepared a variation of it. If you don't have cicerchie, the soup can be made with chickpeas (ceci).

Ingredients:

• 1 cup cicerchie
• olive oil
• 6 oz. roasted strained tomatoes (thawed, since they were made last year and frozen) [the original recipe calls for strained tomatoes]
• one large clove of garlic, or two small, minced
• 2 tablespoons finely chopped fresh flat-leaf parsley (prezzemolo)
• 6 mint (menta) leaves, broken into small pieces with your hands (I used my orange mint)
• water
• 1 cup [240 ml] homemade light chicken stock or vegetable option
• sea salt and freshly milled black pepper, to taste

For the variation:

• quadrucci (see below)
• freshly grated Parmigiano-Reggiano

Soak the cicerchie for 24 hours in 4 cups of water then drain and discard the water. Put in a saucepan and pour water to a level above the cicerchie. Bring to a boil, then lower the heat. Simmer, covered, until tender. The original recipe mentions a long cooking time (roughly 2 hours), which does not match my experience (less than half that time), so check the progress periodically. Also, during cooking, some of the cicerchie lost their skin and I discarded it.

Warm a bit of olive oil in another saucepan, then add garlic and herbs. Cook for a minute or so, until the garlic smells fragrant, stirring, then add the strained tomatoes. Cook into a sauce. In my case, about 8 minutes. Add the cooked cicerchie and let cook in the tomato sauce for 10 minutes, then add the stock plus enough water to make a soup of desired consistency. Continue cooking for 10 minutes. Add salt and pepper to taste and serve immediately.

I served the soup with lightly toasted slices of homemade rye bread (pane di segale), as shown in the top photo.

I made a batch of tagliatelle alla borragine and cut into quadrucci (small squares) the pieces of pasta too short: my mother used to do this when she made tagliatelle, which was pretty much every Sunday.

I cooked the quadrucci in the soup (this only takes a few minutes). Before serving it, I enriched the soup with Parmigiano-Reggiano. Either way, it was a nice dinner soup, the flavor of cicerchie earthy and unique, reminiscent of both chickpeas and lentils.

La cicerchia (Lathyrus sativus) è un legume che, secondo quanto scritto su questa pagina una volta era molto consumato, mentre oggi viene coltivato solo in Italia centrale .

Le cicerchie si trovano solo secche: prima di cuocerle occorre tenerle in ammollo per 24 ore e l'acqua deve poi essere eliminata, poiché contiene un amminoacido neurotossico che può causare latirismo. Tale condizione era e rimane un problema dove e quando la mancanza di fonti alimentari alternative porta al consumo di sostanziali quantità di Lathyrus. Il nostro consumo di cicerchie è molto occasionale e io seguo le istruzioni per la preparazione.

Perugia: la Fontana Maggiore

il giro delle regioni italiane organizzato da Trattoria MuVarA ci porta nella mia regione nativa: Umbria. Sono infatti nata e cresciuta a Perugia. (Questo post ha altre foto della città.)

In post precedenti ho parlato di legumi tradizionali umbri: lenticchie di Castelluccio, fagiolina del Lago Trasimeno e roveja. Per preparare un piatto a base di cicerchie ho consultato il sito dell'Accademia Italiana della Cucina e ho trovato una ricetta umbra per minestra di cicerchie. Come al solito, ho adattato la ricetta ai miei gusti e poi ho preparato una variazione. Se non trovate le cicerchie, potete preparare questa minestra con i ceci.

Ingredienti:

• 180 g cicerchie
• olio d'oliva
  
• 170 g pomodori arrosto passati (scongelati, dal momento che li ho preparati e congelati l'anno scorso) [la ricetta originale prevede passata di pomodoro]
• un grosso spicchio d'aglio (o due piccoli) tritato
  
• 2 cucchiai di prezzemolo tritato
• 6 foglie di menta (io ho usato la mia menta arancio) spezzettate con le mani
  
• acqua
• 240 ml brodo di pollo leggero fatto in casa o brodo vegetale
  
• sale fino e pepe nero macinato fresco, q.b.
  

Per la variazione:

• quadrucci
  
• Parmigiano-Reggiano grattugiato fresco
  

Mettere le cicerchie in ammollo in un litro d'acqua. Dopo 24 ore, scolare le cicerchie e scartare l'acqua. Mettere le cicerchie in una pentola e aggiungere acqua fino a coprirle bene. Portare a bollore poi abbassare il calore. Cuocere a fuoco dolce fino a quando le cicerchie sono tenere. La ricetta originale parla di un tempo di cottura lungo (circa due ore) che non coincide con la mia esperienza (meno di un'ora), quindi il mio consiglio è di controllare periodicamente le cicerchie. Durante la cottura, un certo numero di cicerchie hanno perso la buccia e io l'ho scartata.

Scaldare un po' di olio d'oliva in una pentola, poi aggiungere aglio ed erbe aromatiche. Cuocere per un minuto circa, mescolando, fino a quando l'aglio sprigiona il suo aroma, poi aggiungere i pomodori. Cuocere fino ad ottenere un sughetto (nel mio caso, 8 minuti), poi versare nella pentola le cicerchie e farle cuocere nel sugo per 10 minuti. Versare nella pentola il brodo e abbastanza acqua da formare una minestra della consistenza desiderata. Continuare a cuocere per 10 minuti. Salare e pepare a seconda del gusto e poi servire. 

Ho servito la minestra con delle fettine di pane di segale fatto in casa leggermente tostate, come si vede nella foto in alto.

Ho fatto le tagliatelle alla borragine e ho tagliato a quadrucci i pezzi di pasta troppo corti: mia madre faceva così quando faceva le tagliatelle, quasi tutte le domeniche.

Ho cotto i quadrucci nella minestra portata. Prima di servirla, ho aggiunto del Parmigiano-Reggiano. In entrambi le versioni, questa è un'ottima minestra. Il sapore delle cicerchie è particolare, e ricorda sia le lenticchie che i ceci.

Our tour of the 20 regions of Italy organized by Trattoria MuVarA brings us to Toscana (Tuscany). Though I like Firenze (Florence) and have been there many times, my favorite Tuscan city is Siena, which I featured in this post written after our most recent visit. (Siena is relatively close to my home town of Perugia.)

Siena was the second Italian city my (now) husband visited with me and we both have vivid memories of that occasion. I have always liked the famous Piazza del Campo, but seen my husband's jaw drop when, at the end of a narrow street, the view opened upon it, was a reminder of just how unique the place is.

To prepare something in honor of Tuscany, I went to my wish list and got to the letter "r", where I found ribollita, the famous Tuscan soup. The word ribollita literally means "boiled again." One day you make a pot of soup, then you add bread slices. The day after, you reheat it and it becomes ribollita. There is a bit more to it, but that is the basic idea.

In her cookbook Cucina Povera, Tuscan Peasant Cooking, Pamela Sheldon Johns has a recipe for ribollita that includes a timetable suggesting what to do with the soup on day 1 through 4. Here you can read Sheldon Johns' headnote and recipe, here is the version given by Kyle Phillips, and here is the version by Frank of Memorie di Angelina. Finally, this is the recipe on the Accademia Italiana della Cucina site: it is in Italian, but I am putting the link here anyway, so you can see that no quantity is given for any of the ingredients.

I never had ribollita when visiting Tuscany, which freed me from memory-based constraints. I had the intention to stay close to the tradition, but in the end I took liberties, so, I decided to call the soup I made for the event "ribollita-inspired." However, by using some things I had in the vegetable crisper (mostly from my vegetable patch), I was true to a philosophy that is dear to my heart: you use up everything you have, trying to turn it into something flavorful and healthy.

As part of my most recent grain CSA share, I received some local dry pinto beans  and decided to try them: most recipes I read use cannellini beans, while one uses zolfini beans (I have some of those, but that's a story for another day).

At the farmers' market, I found fava bean leaves (foglie delle fave), also called fava greens, which I had never tasted and had to try so I used those instead of cavolo nero (a.k.a., dinosaur, Tuscan, or black-leaf kale).

Once again, I make no claims about my rendition, but the spirit is there. This being a popular dish, recipes tend to be family-based and also seasonal. And in true popular cuisine style, I didn't weigh anything, so the recipe is a list of ingredients — which makes me laugh since such a behavior used to upset me when I asked my mother for one of her recipes.

Note: the non-leafy vegetables are cut into small pieces, a mix of sliced and diced, while the leafy vegetables are sliced into ribbons. In the list of ingredients I indicate this as "chopped."

1. olive oil
2. 1/4 large onion, chopped
3. 2 scallions, sliced into thin rounds
4. 1 large carrot, chopped
5. 1 small celery rib, chopped
6. 2 garlic cloves, minced
7. 2 small icicle radishes, chopped
8. a bunch of chard stalks, chopped (left over and/or from ingredient #15 below)
9. a mix of herbs (e.g., chopped parsley, leaves of thyme, chopped rosemary needles)
10. 1/2 cup dry pinto beans, cooked as explained in this post
11. 4 cups homemade light chicken stock, or vegetable alternative
12. 1 medium-small cabbage, divided into six wedges and shredded
13. water as needed
14. 1/4 lb. fresh fava bean leaves, chopped
15. a handful of greens for braised mix (chard, kale, mustard greens, etc.), thick ribs removed where necessary, chopped
16. sea salt and freshly milled black pepper, to taste
17. a squeeze of lemon juice
18. bread of choice: I baked this rye bread (without flowers but with caraway seeds), because I thought it would go well with the soup (and I was right); slices of country-style bread, possibly Tuscan (saltless) bread, are traditional

Warm olive oil in a soup pot (a terracotta pot is ideal, but I don't have one — yet) and add onion and scallions. Stir to coat and let cook for a few minutes. Add carrot and celery, stir and cook for a few minutes. Add garlic, then radishes and chard stalks (or whatever you want to use here) and finally the herbs. Let cook for a few minutes and in the meantime, mash the beans.

The recipes I have read instruct you to drain half the beans, and set those aside, then to mash the rest with the cooking liquid. I mashed all the beans in their broth, using a potato masher (so the result was not smooth), then added everything to the soup pot.

Next, pour the broth into the pot and then add the cabbage. Pour some water as well, but not quite to cover, since the cabbage will shrink as it cooks. Cover the pot, bring to a boil and cook gently for 50 minutes or so, until the cabbage is tender. Add the leafy greens, bring back to a boil and cook gently for 10 minutes or so, until everything is nice and just perfect in texture. Season with salt and pepper to taste.

You can serve the soup at this point, by itself (as in the photo above), or ladled in bowls in which you have previously put a layer of thin bread slices. If you do the latter, cover each bowl and keep warm. Let the bread soak up the broth for 15 minutes or so, then serve. In this case, we can call it minestra di pane (bread soup). You can skip this part and go for the ribollita stage.

Put a layer of bread slices in another pot (again here, a terracotta one would be great), and pour soup on it. Depending on how much soup you have, make another layer of bread plus soup. Let the bread soak up the broth for several hours or overnight. When you want to serve the soup, reheat it. If you want a less dense soup, add a bit of water. Gently stir while reheating (this will break the bread), then serve hot with a bit of olive oil drizzled on top.

The splash of green in the top photo is a sort of pesto I made with the leftover fava bean leaves. It is not necessary of course, but it looks nice, doesn't it? The soup was excellent in all versions.

Per i lettori italiani

la mia ribollita

Siena è la seconda è che mio marito ha visitato con me. Vedere i suoi occhi pieni di meraviglia al nostro arrivo a Piazza del Campo mi diede un senso ancora più intenso di quanto sia bella.

Per preparare un piatto in onore della Toscana, ho consultato la mia lista d'attesa e alla letter "r" ho trovato ribollita, la famosa minestra Toscana. L'idea di base è la seguente: il primo giorno si prepara una pentola di minestra. Poi si aggiungono delle fette di pane. Il giorno dopo, si riscalda e diventa ribollita.

Non ho mai mangiato la ribollita quando sono stata in Toscana, il che mi ha reso libera di fare un po' quello che volevo. Sono partita con l'idea di rimanere vicina alla tradizione, ma alla fine ho fatto un po' quello che volevo, in base agli ingredienti che avevo a disposizione (in gran parte provenienti dal mio orticello) e quindi ho chiamato la mia minestra "stile ribollita."

Nella mia cassettina di granaglie più recente ho trovato dei fagioli pinto e ho deciso di usarli, invece dei cannellini. (Una ricetta che ho visto usa i fagioli zolfini, che ho e che userò quanto prima.)

Al farmers' market ho comprato un sacchetto di foglie delle fave, che avevo visto l'anno scorso ma non avevo ancora provato e le ho usate invece del cavolo nero.

Presumo che in Toscana ogni famiglia abbia la propria ricetta per la ribollita. La mia è tradizionale nello spirito, nel senso che utilizza ingredienti di stagione e di produzione locale. Da notare anche che la ricetta sul sito dell'Accademia Italiana della Cucina non specifica le quantità degli ingredienti: come vedrete, io farò altrettanto.

Nota: le verdure non a foglia sono tagliate a pezzetti, mentre quelle a foglia sono tagliate a nastri. Nella lista degli ingredienti, utilizzo per tutte l'aggettivo "tagliate."

1. olio d'oliva
2. 1/4 cipolla grossa, tagliata a pezzetti
3. 2 cipolle verdi, tagliate e rondelle fini
4. 1 carota grossa, tagliata a pezzetti
5. 1 piccola costa di sedano, tagliata a pezzetti
6. 2 spicchi d'aglio tritati
7. 2 piccoli ravanelli ghiacciolo, tagliati a pezzetti
8. una manciata di coste, tagliate a pezzetti (avanzate e/o dall'ingrediente numero 15 qui sotto)
9. un misto di erbe (per es., prezzemolo tritato, foglioline di timo, aghi di rosmarino tritati)
10. 1/2 tazza (120 ml) di fagioli pinto o cannellini, cotti come spiegato in questo post o come fate di solito
11. 4 tazze (950 ml) brodo di pollo leggero fatto in casa, o brodo vegetale
12. 1 cavolo cappuccio medio-piccolo, diviso in 6 spicchi e tagliato a nastri fini
13. acqua, q.b.
14. 120 g foglie delle fave, tagliate a nastri
15. una manciata di verdure a foglia (bietola, cavolo nero, cavolo riccio, ecc.), costa centrale rimossa, se necessario, tagliate a nastri
16. sale fino e pepe macinato fresco, q.b.
17. un po' di succo di limone
18. pane a scelta: io ho fatto questo pane di segale (senza i fiori ma con semi di cumino tedesco), perché pensavo che sarebbe stato perfetto con la minestra (e avevo ragione); tradizionalmente si usa il pane toscano

Scaldare dell'olio d'oliva in una pentola capiente (possibilmente di terracotta) e aggiungere i due tipi di cipolla. Mescolare e far cuocere alcuni minuti, poi aggiungere carota e sedano, mescolare e lasciare cuocere alcuni minuti. Aggiungere aglio, ravanelli e coste (o le verdure che volete usare qui) e le erbe aromatiche. Lasciare cuocere per alcuni minuti e nel frattempo schiacciare i fagioli.

Le ricette che ho consultato dicono di scolare la metà dei fagioli e metterli da parte e di schiacciare o ridurre in purè il resto nel loro brodo. Io ho schiacciato tutti i fagioli nel loro brodo usando questo tipo di schiacciapatate, quindi il risultato non era omogeneo, e ho aggiunto tutto insieme alla minestra.

Versare il brodo nella pentola e poi aggiungere il cavolo. Versare dell'acqua, ma non fino a coprire del tutto, dal momento che il cavolo cuocendo diminuirà di volume. Coprire la pentola, portare ad ebollizione e cuocere a fuoco dolce per circa 50 minuti, fino a quando il cavolo non sia tenero. Aggiungere le verdure a foglia, riportare a bollore e cuocere a fuoco dolce per circa 10 minuti, fino a quando tutto sia ben cotto e piacevole al palato. Condire con sale e pepe a seconda del gusto.

A questo punto potete servire la minestra da sola (come nella foto qui sopra) oppure versarla in piatti fondi nei quali avete messo uno strato di fettine di pane tagliate fine. Se fate questo, tenete in caldo i piatti. Fate riposare un quarto d'ora circa e poi servire. In questo caso, la minestra di verdure si pu&ochiamare minestra di pane. Potete saltare questo passaggio e andare diritto alla ribollita.

Disporre uno strato di pane in fondo ad un'altra pentola (possibilmente di terracotta) e versarci sopra della minestra. A seconda di quanta minestra avete, fare un altro strato di pane e minestra. Lasciar riposare per diverse ore o durante la notte. Quando volete servire la minestra, riscaldatela. Se preferite una minestra meno densa, aggiungere un po' d'acqua. Mescolare con delicatezza mentre la minestra si scalda, poi servire ben calda con un pochino d'olio spruzzato sulla superficie.

Il tocco di verde brillante nella foto in alto è una specie di pesto che ho fatto con le foglie delle fave che mi sono avanzate. Non è necessario, ma ci sta bene, non credete? La minestra è eccellente in tutte le versioni.

Continuing our tour of the 20 regions of Italy organized by Trattoria MuVarA, we arrive in Piemonte (Piedmont), whose capital, Torino (Turin) was also the first capital of the newly united Italian state. It is difficult to do full justice to the many contributions Piemonte has made to Italian gastronomy. A random sample would include gianduia (hazelnut chocolate), Alba truffles (tartufi), several varieties of rice, bagna caoda, cheeses (for example, toma piemontese and bra), grissini (breadsticks) to name just a few highlights. And of course, we cannot forget the wines (Barbaresco, Barolo, Nebbiolo, etc.).

This is a photo from my first visit to Torino, with my parents and brother. It was early December, cold and foggy. It was my first experience of the fog (nebbia) and it made a big impression on me. The city was padded with it: sounds were muffled and objects were faded. I think the photo, shot by my father at the Parco del Valentino, gives an idea of the atmosphere created by the fog. I didn't know at the time that some years later, I would move to Milan and would get very familiar with the thick fog typical of the Po Valley.

A couple of years after that first visit, I was in Torino again with my classmates and had another interesting experience: at the Museo egizio (Egyptian Museum) I saw the face of a mummy, unwrapped. My third and most recent visit was a short one, for a wedding.

None of the visits allowed me time to explore the culinary scene, so once again, for my contribution to the tour, I browsed the recipe section of the Accademia Italiana della Cucina website. Given my partiality for frittata, it is not surprising that I was drawn to a recipe called frità an bagna, which I believe means frittata in sauce in dialect. The English version of the recipe is available in the book by the Academy called La Cucina: The Regional Cooking of Italy. In it, the recipe name is stewed frittata strips, but I made it in a way that it is not really stewed. The book indicates that the recipe is from Vercelli, a city in the heart of rice region.

Another element of the recipe that appealed to me was the use of a substantial quantity of prezzemolo (parsley). What you see in the photo is only a portion of the parsley I have available in my little herb garden. I planted some seeds and a seedling a few years ago and by letting one plant go to seeds every year, I ensure a constant supply of parsley throughout the year.

I have never eaten frità an bagna in Piemonte, so I don't know how my rendition compares to the traditional dish. However, I can tell you that I liked it and have already made it twice. My rendition differs from the original recipe in various ways: for example, I cooked the onion a bit before adding the parsley, used tapioca starch instead of flour (this makes the recipe gluten free), used water instead of milk in the frittata, and omitted the cooking of the frittata strips in the sauce for 10 minutes before serving. I just could not bring myself to further cook the frittata.

Print-friendly version of briciole's recipe for frità an bagna

Ingredients:

• a medium onion, chopped
• olive oil
• 3 1/2 oz. [100 g] flat-leaf parsley, chopped
• one cup [240 ml] broth (I used my homemade chicken broth)
• 1 tablespoon [15 ml] tapioca starch
• 2 tablespoons [30 ml] tomato purée sauce (I used the tomato sauce described in this post)
• 6 eggs (I use pastured eggs)
• 3 tablespoons [45 ml] water
• 2 tablespoons freshly grated Parmigiano-Reggiano
  
• sea salt and freshly milled pepper, to taste

Note on the parsley: my parsley is of the variety gigante d'Italia. The stalks are long and fairly thick. I weighed the parsley after removing the thick main stalk, which I set aside to add to various other ingredients to make chicken stock. With the precious help of my mezzaluna, chopping the parsley (divided into two batches) was a breeze.

Warm up some olive oil in a saucepan, add the onion, stir to coat and cook on gentle heat for 5-7 minutes, stirring often. Add the chopped parsley and stir. Cook for 2-3 minutes. In the meantime, warm up the broth, add the tapioca starch and stir to dissolve and finally stir in the tomato sauce. Pour the liquid into the saucepan, bring to a simmer and cook until the onion is soft. Adjust salt and pepper to taste.

In the meantime, spray a large skillet with olive oil and warm up. I used my largest skillet, whose diameter is 12 inches [30.5 cm]. A slightly wider skillet would have worked as well, since the idea is to make a rather thin frittata. Break the eggs in a bowl and whisk them lightly with a fork until just blended. Add the water, then a few pinches of salt and whisk briefly. Finally, add the cheese and give the eggs a final quick whisk to incorporate it.

Turn on the broiler. (If your oven allows it, choose the "low" setting.) Pour the eggs slowly into the skillet. Cook over low heat until the eggs are set. After the edge is set, run a spatula under it and shake the frittata gently to ensure the bottom does not stick to the pan.

Place the skillet in the oven, leaving the door ajar, for a couple of minutes. The frittata will puff up a bit. Take the skillet out of the oven (don't forget that the handle is hot) and let rest of a couple of minutes, then slide the frittata onto a cutting board. Roll the frittata and slice it into strips no more than 1/2 inch thick. Put the strips in the saucepan with the sauce ans stir delicately. Serve immediately or at room temperature.

la mia version della "frità an bagna"

Continuiamo il tour delle 20 regione italiane organizzato da Trattoria MuVarA e arriviamo in Piemonte. Scusate, ma non posso fare a meno di pensare alla pubblicità del Digestivo Antonetto e a Nicola Arigliano che diceva: "Gruppo vacanze Piemonte, si parte!" E noi partiamo.

Al Parco del Valentino (Torino)

Questa è una foto della mia prima visita a Torino, con i miei genitori e mio fratello. Era l'inizio di Dicembre, faceva molto freddo e c'era la nebbia. Per me fu la prima esperienza della nebbia e mi ricordo bene la strana sensazione dei rumori ovattati e di edifici, alberi, semafori appannati. Credo che la foto scattata da mio padre al Parco del Valentino, renda bene l'idea dell'atmosfera. A quel tempo non immaginavo che qualche anno dopo mi sarei trasferita a Milano e di nebbia ne avrei vista tanta.

Un paio d'anni dopo quella prima visita, sono tornata a Milano con la scuola ed ebbi un'altra esperienza particolare: al Museo egizio vidi il viso di una mummia che era stata sbendata. La mia terza visita avvenne in occasione di un matrimonio.

Nessuna delle visite mi lasciarono tempo di esplorare la scena gastronomica e quindi per il mio contributo al tour ancora una volta ho cercato tra le ricette del sito dell'Accademia Italiana della Cucina. Data la mia parzialità per la frittata, non sorprende che sia stata attirata da un piatto che si chiama frità an bagna (credo che significhi frittata in salsa). La raccolta delle ricette del sito tradotte in inglese (La Cucina: The Regional Cooking of Italy) indica che il piatto è tipico di Vercelli.

Un po' del mio prezzemolo "gigante d'Italia"

Un altro elemento della ricetta che mi ha attirato è l'utilizzo in essa di una sostanziale quantità di prezzemolo. Quella che vedete sulla foto è una parte del prezzemolo che cresce nel mio orticello. Qualche anno fa piantai dei semi e una piantina e ogni anno lascio che una pianta fiorisca sparga i semi: in questo modo raccolto il prezzemolo tutto l'anno.

Non ho mai mangiato la frità an bagna in Piemonte, quindi non ho idea di come la mia realizzazione sia a paragone del piatto tradizionale: se qualcuno di voi conosce questo piatto, lasciatemi un commento con le informazioni che avete. Posso comunque dirvi che la frità an bagna mi è piaciuta molto e infatti l'ho preparata due volte nel giro di pochi giorni.

La mia versione differisce da quella originale in alcuni punti. Per esempio, ho cotto la cipolla un po' prima di aggiungere il prezzemolo, ho usato l'amido di tapioca invece della farina (quindi la ricetta è priva di glutine), ho usato l'acqua invece del latte nella preparazione della frittata e non ho cotto le striscie di frittata nella salsa per 10 minuti prima di servirla (perché l'idea di cuocere a lungo la frittata non mi convince).

Ingredienti:

• una cipolla media tritata
• olio d'oliva
• 100 g prezzemolo tritato
• 240 ml brodo (io ho usato il mio brodo di pollo fatto in casa)
• 1 cucchiaio [15 ml] amido di tapioca
• 30 ml salsa di pomodoro (io ho usato quella descritta in questo post)
• 6 uova codice 0
• 45 ml acqua
• 2 cucchiai Parmigiano-Reggiano macinato fresco
  
• sale fino e pepe nero macinato fresco, q.b.

Il mio prezzemolo è del tipo gigante d'Italia. Gli steli sono  lunghi e piuttosto grossi. Ho pesato il prezzemolo dopo aver rimosso lo stelo centrale, che ho messo da parte per utilizzare, insieme ad altri ingredienti, per fare il brodo di pollo. Con l'aiuto prezioso della mia mezzaluna, tritare il prezzemolo, diviso in due mandate, è stato facile e veloce.

Scaldare un po' d'olio in una pentola, aggiungere la cipolla e mescolare. Cuocere a fuoco leggero per 5-7 minuti, mescolando spesso. Aggiungere il prezzemolo e mescolare. Cuocere per 2-3 minuti. Nel frattempo, scaldare il brodo, sciogliervi l'amido di tapioca e infine aggiungere la salsa di pomodoro. Versare il liquido nella pentola, portare a lieve bollore e cuocere fino a quando la cipolla sia tenera. Aggiustare sale e pepe a seconda del gusto.

Nel frattempo, oliare bene una padella larga (30,5 cm) e scaldarla. Una padella un po' più larga va bene lo stesso, dal momento che l'idea e quella di fare una frittata piuttosto fina. Rompere le uova in una ciotola e sbatterle leggermente. Aggiungere l'acqua e un paio di pizzichi di sale e incorporare. Infine, aggiungere il formaggio e sbattere leggermente per incorporare.

Accendere la parte alta del forno. (Se il vostro forno lo permette, scegliere l'opzione a calore basso.) Versare lentamente le uova nella padella. Cuocere a fuoco dolce fino a quando le uova sono rapprese. Una volta che il bordo delle frittata si è rappreso, passare una spatolina sotto il bordo e scuotere la padella (delicatamente) per evitare che la frittata si attacchi.

Quando le uova si sono rapprese, mettere la padella nel forno, lasciando lo sportello socchiuso, per un paio di  minuti. Tirare fuori la padella (fare attenzione: il manico scotta) e far riposare un paio di minuti, poi far scivolare la frittata su un tagliere, arrotolarla e tagliarla strisce larghe circa 1 cm. Deporre le striscie di frittata nella pentola della salsa e mescolare delicatamente. Servire immediatamente o a temperatura ambiente.

It was a long, long ride. But toward evening, as we sat silent and hardly conscious of where we were -- subdued into that meditative calm that comes so surely after a conversational storm -- some one shouted --

"VENICE!"

And sure enough, afloat on the placid sea a league away, lay a great city, with its towers and domes and steeples drowsing in a golden mist of sunset.

Thus ends chapter 21 of Innocents Abroad (1869), Mark Twain's account of his 1867 trip to Europe and the Holy Land. "The book began as a series of travel letters written mainly for the Alta California, a San Francisco paper." In chapters 22 and 23, we see Twain exploring Venice, meditating on its present and past, and enjoying his gondola rides.

Twain approached Venice the same way I have done many times, by train. My most recent visit, however, started differently. After landing at Venice airport, I took a boat that slowly crossed the lagoon north of the city, stopping briefly in Murano on its way, and giving passengers ample time to admire the setting sun embracing the city in warm colors.

As soon as I dropped my suitcase in my lodging, I went out again. At night, Venice acquires a contemplative mood and it is easier to connect with it when the tourists have magically disappeared. Twain also discovered the magic of Venice by night:

In the glare of day, there is little poetry about Venice... But in the moonlight, her fourteen centuries of greatness fling their glories about her, and once more is she the princeliest among the nations of the earth.

I respectfully disagree with Twain's first statement, though. It may be more difficult to find the poetry of the city under glaring light and surrounded by many people, but it is possible: just step outside the fixed itineraries, go roaming around and chances are you'll find interesting and quieter corners. When I visit Venice, I usually have a rough plan of action, but mostly I let chance encounters set the agenda. I make use of the waterways very rarely, preferring to find lose my way around on foot.

Twain, on the other hand, enjoyed going around on a gondola and was fascinated by it.

The Venetian gondola is as free and graceful, in its gliding movement, as a serpent. It is twenty or thirty feet long, and is narrow and deep, like a canoe; its sharp bow and stern sweep upward from the water like the horns of a crescent with the abruptness of the curve slightly modified.

The stern of the boat is decked over and the gondolier stands there. He uses a single oar--a long blade, of course, for he stands nearly erect. A wooden peg, a foot and a half high, with two slight crooks or curves in one side of it and one in the other, projects above the starboard gunwale. Against that peg the gondolier takes a purchase with his oar, changing it at intervals to the other side of the peg or dropping it into another of the crooks, as the steering of the craft may demand -- and how in the world he can back and fill, shoot straight ahead, or flirt suddenly around a corner, and make the oar stay in those insignificant notches, is a problem to me and a never diminishing matter of interest. I am afraid I study the gondolier's marvelous skill more than I do the sculptured palaces we glide among.

The "wooden peg" is called forcola: each one is a work of art, crafted to fit the individual gondoliere and hence unique, one of the approximately 280 pieces that make a gondola.

During my last visit, I arranged my plans so that I spent three nights in Venice and since I was staying in a quiet corte off Riva degli Schiavoni, every evening I walked along the wide and relatively uncrowded Riva, took in the view across to San Giorgio Maggiore, reached St. Mark's Square, passed by the Caffè Florian then crossed towards the Caffè Quadri on the other side, then retraced my steps via a different, quieter, and darker route.

And at midnight... we have lonely stretches of glittering water --of stately buildings--of blotting shadows--of weird stone faces creeping into the moonlight--of deserted bridges--of motionless boats at anchor. And over all broods that mysterious stillness, that stealthy quiet, that befits so well this old dreaming Venice.

In the windows of pastry shops in Venice, you can see zaletti, their elongated shape dusted with powdered sugar, raisins peeking out here and there with a promise of more once you take a bite. (I don't have a photo, but you can see a nice one in this post by Kathy of Food Lover's Odyssey.) Twain does not mention any food in the chapters about Venice, so I don't know if he ate any zaletti (or zaeti). These baked goods are also known as gialletti: the name reportedly refers to the yellow color (giallo) given to them by the cornmeal (farina di mais) with which they are made. My memory of zaletti is very vague, hence totally unreliable as a base for working in the kitchen, so I looked around for recipes: they are all rich in butter and sugar and I wanted something simpler.

I then checked Artusi's cookbook Science in the Kitchen and the Art of Eating Well (1891) and there I found two recipes for gialletti, the first of which uses yeast. I decided to explore this path further. None of the modern recipes I read uses yeast, relying instead on baking powder as leavening agent. However, an article on cookaround (in Italian) mentions a cookbook older than Artusi's and the recipe for zalletti alla veneziana (Venetian-style) in it uses leaven and no sugar. The book is called La nuova cucina economica and was authored by Vincenzo Agnoletti. The first edition dates to 1803 and the second, titled La nuovissima cucina economica, to 1814. At the end of my search, I felt good about my determination to make zaletti with yeast according to Artusi's recipe. I am planning to follow Agnoletti's recipe, which differs from Artusi's in several ways, for the next phase of my exploration of zaletti.

Artusi's recipe is fairly detailed but it does not provide pieces of information like the amount of water and the time for leavening and baking. I also decided to experiment using all cornmeal (from my CSA share, hence locally grown and freshly milled) and then substituting part of it with corn flour, which is more finely milled than cornmeal. The gialletti made with only cornmeal are a bit more rustic. My husband favored them, while I had a slight preference for the ones with also corn flour. The original recipe calls for half butter and half lard. I have some homemade lard, so I used a bit of it. Overall, I halved the quantities given by Artusi and obtained eight gialletti.

Ingredients:

• 50 g / 1 3/4 oz. all-purpose flour [as usual, I used King Arthur Flour all-purpose flour], divided into two
• 2 tablespoons / 30 ml of water at room temperature
• 1 teaspoon instant yeast
• 150 g / 5 1/4 oz. cornmeal [or 50 g / 1 3/4 oz. cornmeal and 100 g / 3 1/2 oz. corn flour]
• 1/3 cup + 2 tablespoons / 90 ml of hot water
• 1/2 tablespoon sugar [I used ultra-fine sugar]
• 1 oz. / 2 tablespoons / 30 g butter, softened [once I used 1/3 lard and 2/3 butter] (see Note at the end)
• a pinch of salt
• 50 g / 1 3/4 oz. raisins

In a small bowl, mix half of the wheat flour, the yeast and the water at room temperature. Let it ferment until bubbly. I did it for 45 minutes. In the meantime, in another bowl mix the cornmeal, the remaining wheat flour, the sugar, and salt. Pour the hot water in the bowl, add the butter and mix well.

Add the pre-ferment to the flour mixture and knead to combine well. Add a bit of water, as needed, to make a dough that is easy to knead. Finally, add the raisins and knead a while longer to incorporate them.

Cut the dough into eight pieces and give them oblong shapes (see photo below). Place on a baking sheet lined with a silicone mat or parchment paper. With the back of a knife blade, make a grid on the top of each gialletto. Cover with a cloth and let leaven in a warm place (I did it for 1 1/2 hour). They will rise a bit, but not a lot, given the flour mix.

Pre-heat the oven to 350 F. Bake the gialletti for 15 minutes or so (I baked them for 16 minutes). Transfer to a rack to cool.

I enjoyed eating Artusi's gialletti with some of my homemade cheese and they also pair well with chocolate. My husband likes them au naturel.

Note: you can find the English version of the recipe in the translation of Artusi's book that I have referenced in the past. The translation shows "50 g (about 1 ounce)" of butter. Based on the original and the conversion value, 50 appears to be a typo: it should be 30. Also, the translation directs you to make a pre-ferment with half the cornmeal and the yeast. The original uses half of the wheat flour.

Per i lettori italiani

Al termine del capitolo 21 de Gli innocenti all'estero (1869), l'autore, Mark Twain, arriva a Venezia nell'ambito di un viaggio in Europa e Terra Santa compiuto nel 1867. Nei due capitoli successivi, vediamo Twain esplorare Venezia, meditare sul passato e presente della città e godersi i giri in gondola.

Twain arriva a Venezia in treno, come ho fatto anch'io tante volte. Ma per la mia visita più recente sono arrivata in aereo e dall'aeroporto mi sono goduta la lenta traversata della laguna al tramonto. Appena arrivata al mio alloggio, ho lasciato la valigia e sono uscita a fare una passeggiata per Venezia di notte. Anche Twain è affascinato dalla città in versione notturna.

Quando visito Venezia ho una vaga idea di quello che voglio visitare ma per la maggior parte del tempo lascio che sia il caso a dirigere il mio cammino. Raramente uso i trasporti sull'acqua, preferendo girovagare e perdermi a piedi.

Twain, invece si muove in gondola ed è affascinato dai movimenti del gondoliere tanto da confessare di prestare più attenzione a studiare la maestria del gondoliere che ad ammirare i palazzi. (I passaggi ai quali mi riferisco sono riportati in originale nella versione inglese del post. Perdonate l'assenza della versione italiana: non ho trovato una traduzione di Twain online e a farla io non mi sento qualificata.)

Durante la mia visita recente, durata purtroppo solo un giorno, ho focalizzato la mia attenzione e la mia macchina fotografica sulla forcola. L'ispirazione mi è venuta dall'essermi trovata di fronte ad un laboratorio di remèr. Ho imparato che ogni forcola è fatta a misura del gondoliere ed è un pezzo unico nonche un'opera d'arte. Se osservate una gondola parcheggiata, potete notare che c'è un foro rettangolare dove va posizionata la forcola. Quando la gondola è a riposo, la forcola viene rimossa sia perché essendo sporgente può essere urtata e sia perché è un pezzo prezioso e non viene lasciato incustodito. Questo me lo ha spiegato un gondoliere.

Nelle vetrine di forni e pasticcerie a Venezia, tra i vari dolci in mostra, ci sono gli zaletti, dalla forma allungata e la superficie imbiancata di zucchero a velo dal quale fanno capolino acini di uvetta. (Non ho una foto ma ne potete vedere una in questo post di Kathy del blog Food Lover's Odyssey.) Twain non parla di quello che ha mangiato a Venezia quindi non so se ha assaggiato degli zaletti (o zaeti). Chiamati anche gialletti, il nome pare si riferisca al colore giallo dorato che viene loro dalla farina di mais con cui sono fatti. La mia memoria di zaletti è vaga e inaffidabile come base per prepararli e quindi ho guardato in giro alla ricerca di ricette. Quelle che ho trovato sono ricche di burro e io volevo qualcosa di semplice.

Mi sono quindi rivolta all'Artusi, nel cui libro ci sono due ricette per gialletti la prima delle quali usa il lievito di birra. Ho deciso di esplorare questa alternativa. Le ricette moderne usano tutte il lievito chimico. Un articolo su cookaround menziona un libro di cucina che precede quello di Artusi e la ricetta per zalletti alla veneziana che esso contine utilizza pasta lievitata e non contiene zucchero. Il libro si intitola La nuova cucina economica ed è opera di Vincenzo Agnoletti. La prima edizione risale al 1803 e la seconda, intitolata La nuovissima cucina economica, al 1814. Al termine della mia ricerca, sono soddisfatta della mia determinazione a preparare gli zaletti con il lievito naturale. Ho intenzione di provare a seguire la ricetta di Agnoletti, che è diversa da quella dell'Artusi, per la prossima fase della mia esplorazione degli zaletti.

La ricetta dell'Artusi (che riporto in fondo al post) è piuttosto dettagliata, ma non fornisce informazioni quali la quantità di acqua e il tempo di lievitazione e cottura. Le prime due volte ho usato tutta la farina di mais tipo fioretto che ottengo come parte della mia cassettina di granaglie (e che quindi è macinata fresca), mentre la terza volta ho sostituito una parte con della farina di mais macinata più fina (fumetto). I gialletti fatti solo con il fioretto sono un tantino più rustici e mio marito li preferisce. Io invece ho una leggera preferenza per quelli fatti anche con farina più fine. La ricetta originale usa metà strutto e metà burro. Io ho dello strutto che ho fatto e quindi ne ho usato un pochino. In totale, ho dimezzato le quantità date dall'Artusi e ho oattenuto così otto gialletti.

Ingredienti:

• 50 g farina di grano (medio-forte, dal momento che useremo il lievito secco o di birra)
• 30 ml acqua a temperatura ambiente (o tiepida)
• 1 cucchiaino (5 ml) lievito secco istantaneo [Artusi userebbe 10 g di lievito di birra]
• 150 g farina di mais tipo fioretto [o 50 g di fioretto e 100 g di farina di mais fumetto]
• 90 ml acqua bollente
• 1/2 cucchiaio (7.5 ml) zucchero fine
• 30 g burro morbido [o 10 g strutto e 20 g burro]
• un pizico di sale
• 50 g uvetta

In una tazza, mescolare metà della farina di grano, il lievito e l'acqua a temperatura ambiente. Lasciar fermentare fino a quando si vedono bolicine in superficie. Per me, 45 minuti. Nel frattempo, in una ciotola, mescolare la farina di mais, il resto della farina di grano, zucchero e sale. Versarci sopra l'acqua bollente e mescolare bene.

Aggiungere la pasta fermentata e impastare bene. Aggiungere poca acqua, se necessario, per ottenere un impasto che si lavora bene. Aggiungere l'uvetta e impastare fino a quando sia ben distribuita.

Tagliare l'impasto in otto pezzetti e formare dei fusi / mandorle (vedi foto in basso). Adagiarli su una lastra da forno coperta con tappetino di silicone e carta da forno. Con la parte dietro di una lama di coltello, incidete una griglia sulla superficie. Coprire con un canovaccio e lasciar lievitare in luogo caldo (per me, un'ora e mezzo). I gialletti lieviteranno leggermente, ma non in modo spettacolare, dato il mix di farine.

Scaldare il forno a 175 C. Cuocere i gialletti per 15-16 minuti (Artusi dice che devono rimanere morbidi). Trasferire su una griglia e lasciar intiepidire.

I gialletti dell'Artusi accompagnano bene il mio formaggio fatto in casa e anche il cioccolato. A mio marito piacciono al naturale.

592. GIALLETTI I

Signore mamme, trastullate i vostri bambini con questi gialletti; ma avvertite di non assaggiarli se non volete sentirli piangere pel caso molto probabile che a loro ne tocchi la minor parte.

Farina di granturco, grammi 300.
Detta di grano, grammi 100.
Zibibbo, grammi 100.
Zucchero, grammi 50.
Burro, grammi 30.
Lardo, grammi 30.
Lievito di birra, grammi 20.
Un pizzico di sale.

Con la metà della farina di grano e col lievito di birra, intrisi con acqua tiepida, formate un panino e ponetelo a lievitare. Frattanto impastate con acqua calda le due farine mescolate insieme con tutti gl'ingredienti suddetti, eccetto l'uva. Aggiungete al pastone il panino quando sarà lievitato, lavoratelo alquanto e per ultimo uniteci l'uva. Dividetelo in quindici o sedici parti formandone tanti panini in forma di spola, e con la costola di un coltello incidete sulla superficie d'ognuno un graticolato a mandorla. Poneteli a lievitare in luogo tiepido, poi cuoceteli al forno o al forno da campagna a moderato calore onde restino teneri.

The name pesto comes from the past participle of the Italian verb pestare (to pound). In fact, pesto is made by placing the ingredients in a marble mortar (mortaio). I read that, once basil leaves are added, circular movements of the wooden pestle (pestello) against the sides of the mortar are preferred to pounding: they are applied until the sauce attains the desired consistency.

The traditional recipe requires the Genovese cultivar of sweet basil (basilico). The flavor of pesto depends on the flavor of the basil used, but the quality and quantity of the other ingredients play an important role in highlighting the taste of the herb, while at the same time providing different nuances. The first published recipe (in 1863) included formaggio d'Olanda (Dutch cheese) among the ingredients, together with parmigiano. Pecorino from Sardinia later took the place of Dutch cheese.

In July 2010, I read a post on pesto secco by Mitì Vigliero, a.k.a. Placida Signora. That original post is no longer available, but more recently, Mitì wrote again about the recipe in this post. What I read, prompted me to adapt my old recipe to the novel concept of a pesto made without oil. In her post, Mitì explains that in the days before refrigeration, pesto was prepared this way during the height of basil season to preserve it for longer storage (for example, in the villages on the Ligurian Apennines it was then stored under snow).

The recipe I use was inspired by that on the Pesto Championship website. To make it, I use California walnuts (noci) instead of imported pine nuts (pinoli) and the food processor instead of mortar and pestle. The full recipe yields enough pesto for two one-pound batches of pasta. When I make "regular" pesto, I divide it into half and use one immediately to season a pound of pasta (often linguine), and freeze the remaining half for later use. If I make pesto secco, I divide it into two and prepare it for storage (see below). Depending on the amount of basil I have, I may make half the quantity (for immediate use or for storage). Having pesto in the freezer allows me to make pasta al pesto any time I want, especially when I want to bring a taste of summer to the table.

Below, I will give you my recipe in both the "regular" and "dry" variation, so you can make either version, depending on your needs. 

Ingredients for pesto secco:

• 2.5 oz. [70 g] basil leaves, washed in cold water and patted dry
• 1 big or 2 small fresh garlic cloves
• 1/3 cup walnuts, lightly toasted (I blanch them briefly and dry them in the oven at 300 F)
• 1 teaspoon salt
• 2 oz. [55 g] freshly-grated Parmigiano-Reggiano
• 1 oz. [30 g] freshly-grated pecorino¹

Additional ingredient for regular pesto:

• 1/4 cup + 1/2 tablespoon extra-virgin olive oil [see below for olive oil to add right before using pesto secco]

Mince the garlic clove(s) and nuts in the food processor.  Add the salt and the basil leaves, then start the food processor again. When the basil starts dripping a bright green liquid, add the cheeses.

The following instructions apply only if you are making regular pesto: With the food processor running, slowly add the olive oil through the feeding tube. Process only until blended, to avoid overheating the mixture by attrition. Divide the pesto into two and use half immediately to dress a pound of pasta. Place the other in a small plastic container, cover surface with a piece of wax paper, put lid and freeze (don't forget to label the container with both content and date of preparation).

The following instructions apply only if you are making dry pesto: Process briefly to incorporate the cheeses. Divide the pesto into two and shape each half into a kind of fat sausage, wrap tightly in foil and refrigerate or freeze (don't forget to label the foil with both content and date of preparation). According to Mitì, the dry pesto lasts in the fridge 10 days or more. I have never tried this option, preferring to freeze it for use during the winter.

When you are ready to use the pesto:

If you are using a frozen container of regular pesto, take it out of the freezer, and let thaw at room temperature. As the water for the pasta is coming to a boil, empty the container into the bowl (insalatiera) where you will dress the pasta.

If you are using frozen dry pesto , take one package out of the freezer and let thaw at room temperature. As the water for the pasta is coming to a boil, open the package and empty the content into the bowl where you will dress the pasta. Dilute the dry pesto with 2 tablespoons plus 1/2 teaspoon of extra-virgin olive oil.

Drop one pound of dry pasta of choice into salted water at a rolling boil and cook until al dente. Add a tablespoon or so of the cooking water to the pesto to make a creamy sauce. Drain the pasta and add to the bowl, then stir well. Serve immediately.

For my first use of the pesto secco I had made a few months ago, I chose a shape of pasta I like a lot called rocchetti (small spools).

My husband was very happy to have a bowl of pasta al pesto for lunch, its bright green color a promise that spring is just around the corner, then summer will arrive and with it, more basil to turn into pesto.

¹ Sometimes I used another sharp cheese instead of pecorino.

La ricetta traditionale del pesto richiede il basilico genovese. Il sapore del pesto dipende dal sapore del basilico usato, ma la qualità e quantità degli altri ingredienti gioca un ruolo importante nel sottolineare il sapore dell'erba aromatica e allo stesso tempo fornire sfumature diverse. La prima ricetta del pesto pubblicata (nel 1863) aveva tra gli ingredienti il formaggio d'Olanda, insieme al parmigiano. Il pecorino sardo più sostituì il formaggio d'Olanda.

Nel Luglio del 2010, lessi un post sul pesto secco di Mitì Vigliero, la Placida Signora. Quel post non è più online, ma di recente Mitì ha parlato ancora della ricetta in questo post. La lettura mi ha indotto ad adattare la mia vecchia ricetta per il pesto al nuovo concetto del pesto preparato senza olio. Nel suo post, Mitì spiega che prima dell'avvento della refrigerazione, il pesto veniva preparato in questo modo durante l'apice della stagione del basilico per conservarlo a lungo (per esempio, nei paesi dell'Appennino ligure, poi veniva conservato sotto la neve).

La ricetta che uso è ispirata da quella sul sito del Pesto Championship. Per preparare il pesto, utilizzo noci della California (produzione locale) invece dei pinoli di importazione e il robot invece di mortaio e pestello. La ricetta intera dà abbastanza pesto per due volte volte (cuocendo ogni volta una libbra di pasta). Quando faccio il pesto "normale" lo divido in due e uso una metà subito per condire una libbra di pasta (450 g, di solito linguine), e surgelo l'altra metà per uso futuro. Avere il pesto nel freezer mi permette di preparare la pasta al pesto in qualsiasi momento, specialmente quando voglio portare in tavola una ventata di sapore estivo.

Qui sotto trovate la mia ricetta per il pesto in version sia "normale" che "secco," così potete preparare la versione che più si addice al vostro bisogno.

Ingredienti per il pesto secco:

• 70 g foglie di basilico, lavate in acqua fredda e asciugate su un canovaccio che assorbe l'acqua
• uno spicchio d'aglio grosso o due piccoli
  
• 35 g noci leggermente tostate (io le tuffo nell'acqua bollente per un minuto, le scolo e le metto su un canovaccio per assorbire un po' dell'acqua e poi le tosto in forno a 150 C fino a quando sono ben asciutte)
• un cucchiaino [5 ml] di sale marino fino
• 55 g di Parmigiano-Reggiano appena grattugiato
  
• 30 g di pecorino grattugiato fresco (possibilmente fiore sardo)¹

Inoltre, per il pesto normale:

• 60 ml + mezzo cucchiaio [7,5 ml] olio extra-vergine di oliva [vedere sotto per quanto riguarda l'aggiunta di olio d'oliva al pesto secco prima del suo utilizzo]

Tritare aglio e noci nel robot. Aggiungere sale e basilico e fare ripartire il robot. Quando il basilico comincia a produrre del succo verde, aggiungere i formaggi.

Quanto segue vale solo se fate il pesto "normale": Col robot in azione, aggiungere lentamente l'olio attraverso l'apposita apertura. Far andare il robot solo fino a quando l'olio e incorporato ed evitare che il pesto si surriscaldi per attrito. Dividere il pesto in due e usatene metà subito per condire una libbra (poco più di 450 g) di pasta. Mettere l'altra metà in un piccolo contenitore, coprire la superficie con della carta oleata, tappare il contenitore e congelare (non dimenticate di etichettare il contenitore specificando la data di preparazione).

Quanto segue vale solo se fate il pesto "secco": Far andare il robot solo fino a quando i formaggi sono incorporati. Dividere il pesto in due e dare a ogni metà la forma di un salsicciotto, avvolgere bene in alluminio e mettere in frigorifero o congelatore (non dimenticate di etichettare il pacchetto specificando contenuto e data di preparazione). Mitì scrive che il pesto secco dura 10 giorni o più nel frigorifero. Non ho mai provato, perché preferisco congelare il pesto e usarlo durante l'inverno.

Quando volete utilizzare il pesto:

Se utilizzate un contenitore di pesto "normale" congelato, tirarlo fuori dal congelatore e farlo scongelare a temperatura ambiente. Quando l'acqua per la pasta sta per bollire, svuotare il contenitore nell'insalatiera dove condirete la pasta.

Se utilizzate un salsicciotto di pesto secco, tirarlo fuori dal congelatore e farlo scongelare a temperatura ambiente. Quando l'acqua per la pasta sta per bollire, mettere il salsicciotto nell'insalatiera dove condirete la pasta. Diluire il pesto secco con 2 cucchiai e mezzo cucchiaino (32,5 ml) di olio extra-vergine d'oliva.

Cuocere al dente una libbra (poco più di 450 g) di pasta. Aggiungere al pesto un cucchiaio dell'acqua di cottura della pasta per farne una salsa cremosa. Scolare la pasta e versarla nell'insalatiera, poi mescolare bene. Servire immediatamente.

Per il mio primo utilizzo del pesto secco che avevo fatto alcuni mesi fa, ho scelto un tipo di pasta che mi piace molto: i rocchetti.

With this post, I am starting an exploration of traditional dishes from the various regions of Italy in the company of other bloggers. We start from the north-west corner of the country, a small region called Valle d'Aosta (Aosta Valley), whose capital is Aosta.

I visited Aosta Valley twice, once with my high school class and more recently, with my husband. We stayed a few days in Courmayer, at the foot of Monte Bianco (Mont Blanc), and one day we took the funivia (cable car) to the Aiguille du Midi (you can then go down to Chamonix, on the French side, but we didn't do that). Below are a few images I took that day (the originals are slides).

It was an amazing experience, especially the last portion, traversed inside a cozy egg-shaped car that stopped at regular intervals leaving you suspended in the deep silence of the mountains. This page shows the cable car route and this page has more photos of the spectacular trip.

To find a recipe representative of Aosta Valley, I turned to the Accademia della Cucina Italiana site and chose to prepare my rendition of the trota al vino rosso di Saint-Pierre. I have recently baked trout several times, so I was interested in trying a different recipe for a fish (pesce) I have always liked. I adapted the original recipe to use one trout instead of four, though the trout I bought weighed one pound, so it was fairly large. The English version of the recipe is available in the book by the Academy called La Cucina: The Regional Cooking of Italy. I did not have the wine called for, so I used red wine from Sonoma County (California). Also, I did not have time to prepare the recipe again before the deadline for the event, so I am adding a note pertaining plans for the future.

Ingredients:

• a trout, cleaned  [see Note 1 below]
• olive oil
• a small onion, minced
• half a large carrot, finely chopped
• a couple of sage leaves (foglie di salvia), thinly sliced
• the needles of a small rosemary sprig (rametto di rosmarino) (about 2 inches), minced
• 1/2 cup leftover roasted potatoes, diced (optional) [see Note 2 below]
• a cup of red wine, slightly warmed
• sea salt and freshly milled black pepper to taste

Note 1: the trout I bought weighed 1 lb and did not fit well in the largest skillet I had. The next time I make this dish, I will get two smaller trout (3/4 lb or so each) and double the amount of the other ingredients.

Note 2: I had some leftover roasted potatoes, cut into bit-sized pieces and decided to add them to the other vegetables, after dicing them. This ingredient is not in the original recipe.

Preheat oven to 350 F. Rinse trout and pat dry. Sprinkle a bit of salt and pepper inside and outside. Warm up olive oil in a skillet large enough to contain the trout. Choose a skillet that can go in the oven. Add onion, carrot and herbs, stir well and cook until the vegetables are soft, stirring often. Add the potatoes and stir, then add the trout. When it begins to brown, pour the wine over it. Turn up the heat to medium and cook for five minutes, then place the skillet into the oven to complete the cooking (about 15 minutes). The trout is ready when the flesh flakes easily with a fork.

Remove skin, debone the trout and serve with the vegetables.

Con questo post, comincio un'esplorazione di piatti tradizionali delle regioni italiane in allegra compagnia (vedi sotto). Partiamo dalla Valle d'Aosta e il suo capoluogo, Aosta.

Sono stata in Valle d'Aosta due volte, in gita con il liceo e più recentemente con mio marito. Abbiamo alloggiato a Courmayer, ai piedi del Monte Bianco e un giorno abbiamo preso la funivia per l'Aiguille du Midi. Qui sotto ci sono alcune immagini della salita (le originali sono diapositive).

È un'esperienza incredibile, specialmente l'ultimo tratto che si fa in piccole cabine che si fermano ad intervalli regolari lasciandoti in sospeso nel silenzio profondo delle montagne. Questa pagina mostra il tragitto della funivia e questa pagina mostra delle foto del tragitto.

Per trovare una ricetta tradizionale della Valle d'Aosta ho consultato il sito dell'Accademia della Cucina Italiana e ho scelto di preparare una versione personale della trota al vino rosso di Saint-Pierre. Ho adattato la ricetta originale per una trota, che comunque pesava quasi mezzo chilo. Non avendo a disposizione il vino di Saint-Pierre, ho usato un rosso di Sonoma County (California). Non ho tempo di rifare la ricetta prima della scadenza dell'evento, quindi ho aggiunto una nota riguardante il progetto per la prossima volta.

Ingredienti:

• una trota, pulita  [vedi Nota 1]
• olio d'oliva
• una cipolla piccola tritata
• mezza carota grossa tagliata a dadini piccoli
• un paio di foglie di salvia tagliate sottili
• gli aghi tritati di un rametto di rosmarino (lungo 5 cm)
• patate arrosto avanzate tagliate a dadini (facoltative) [vedi Nota 2]
• 240 ml di vino rosso leggermente scaldato
• sale fino e pepe nero macinato fresco, a piacere

Nota 1: la trota che ho comprato pesava mezzo chilo e non entrava bene nella padella più larga che ho. La prossima volta che preparo questa ricetta, utilizzerò due trote più piccole (massimo 350 g l'una) e raddoppierò la quantità degli altri ingredienti.

Nota 2: Avevo poche patate arrosto (più o meno una patata tagliata a dadi) e ho deciso di aggiungerle, dopo aver tagliato i pezzi a dadini. Questo ingrediente non è compreso nella ricetta originale, ma ci sta bene.

Scaldare il forno a 180 C. Sciacquare la trota e asciugarla. Scaldare l'olio in una padella grande abbastanza da contenere la trota e che poi può andare in forno. Aggiungere cipolla, carota ed erbe aromatiche e mescolare bene. Cuocere fino a quando le verdure sono tenere, mescolando spesso. Aggungere le patate e mescolare, poi adagiare la trota nella padella. Quando è dorata, versarci sopra il vino. Cuocere a fuoco medio per cinque minuti e poi passare in forno per terminare la cottura (15 minuti circa). La trota è pronta quando la carne di sfalda facilmente.

Togliere la pelle, deliscare e servire la trota con le verdurine.

The Romans ate puls made with farro, millet and other grains boiled in water or milk. Corn (granturco) from the Americas was introduced in Europe in the 16th century. Corn cultivation expanded to Italy in the 17th century and was rapidly adopted, especially in the Northern regions. Polenta made with corn became a staple of the lower classes, in part because corn was cheaper than the wheat used for bread, but also because of the sense of satiety it provided.

My mother made corn polenta using a 50/50 mix of farina di mais¹ (cornmeal) of two different kinds, one finer and one coarser. When I started making polenta in California, I used half cornmeal and half polenta (i.e., the product sold as polenta, see photo above).

When I was 22 years old, my polenta horizon expanded to encompass polenta taragna. A few months after I moved to Milan, I visited Valtellina, a beautiful Alpine valley northeast of the city. Some of the foods I ate there left a lasting impression on me, like those made using farina di grano saraceno (buckwheat flour).

Buckwheat production in Valtellina dates back to the 1600's and buckwheat flour appears in traditional dishes like pizzoccheri (short tagliatelle that are cooked together with potatoes and Savoy cabbage or Swiss chard, then layered with cheese and dressed with butter), polenta taragna (more on this below) and sciatt (cheese-filled fritters). Buckwheat is not a cereal grain, but a fruit seed, so it is "a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein glutens" [source].

Since buckwheat flour is gray (with black specks from the hulls), the polenta made with it is grayish. In polenta taragna, buckwheat flour is mixed with some cornmeal. The word taragna does not refer to an ingredient, but to the tarai or tarel, the wooden implement traditionally used to stir the polenta while it was cooking in the copper pot, which hung inside the fireplace.

The recipe that follows is my personal and locally grown version of polenta taragna. To make it, I use freshly milled cornmeal and buckwheat flour from my grain CSA share with Shakefork Community Farm. You can use products available in your market.

Print-friendly version of briciole's recipe for polenta taragna

Ingredients:

• 1/2 cup (65 g / 2 1/4 oz.) stone-ground cornmeal (I first sifted my cornmeal using a mesh colander, then measure it)
• 1/2 cup (75 g / 2 3/4 oz.) stone-ground buckwheat flour
  
• 4 cups cold water [see Note below]
• a bit of salt
• cheese of choice, to taste, cut into small pieces or grated, depending on consistency

Note: The polenta I obtain from this recipe is fairly soft. If you want a firmer version, decrease the amount of water. (Keep in mind that polenta becomes firmer as it cools.)

Pour the cold water into a saucepan and add a bit of salt. Slowly add the cornmeal and then the buckwheat flour in a thin stream, while whisking to mix. The pan then goes over medium heat. As soon as the water reaches boiling point, turn down the heat to low. Keep stirring with the whisk until the polenta becomes thick, at which point you may want to switch to a wooden spoon as stirring implement.

Cook the polenta for at least 50 minutes (I usually cook it a few minutes longer). During that time, stir often to prevent the polenta from sticking to the bottom of the pan and to avoid the build-up of steam that results in small volcanic explosions. (You don't need to obsess over the pan, though.)

Traditional polenta taragna includes butter (burro) and local cheese (formaggio). I omit the butter, preferring a lighter dish, but I do add cheese. Valtellina has its own traditional cheeses, like scimudin, casera and bitto (the last two have PDO status: if you have access to a well-stocked cheese store, ask about them).

I have been making cheese at home for some time, so I shop from my little stash and I like to experiment with different cheeses. Depending on the consistency of the cheese I choose, I cut it into small pieces or grate it. Sometimes, I mix two different cheeses. I don't weigh or otherwise measure the cheese. However, one day that I made this polenta, I paid attention and I know that I used 2 oz of aged Asiago cheese, grated. If I use a softer cheese, I am sure I use a bit more. While I do like to taste the cheese, I try to get a balanced flavor, so the polenta can work well as a side dish.

Add the chosen cheese to the polenta at the end of the cooking time, and stir to incorporate it. Taste and, if necessary, add more cheese. Serve immediately. If using cheese cut into small pieces, the bits that don't melt completely will make for a pleasant tasting experience.

My take on polenta taragna works nicely as a side dish to a variety of vegetarian and meat entrées, like chicken with Catalan picada. When I cook polenta for our binary household, I always have leftovers, which I spoon into a square container: this makes it easy to cut the cold polenta into even-sized slices. When I want to reheat it, I spray a cast-iron skillet with some olive oil, and when it is warm, deposit slices of polenta in it, then cook on both sides. If done properly, the polenta slices will have a thin crust that adds to the pleasure of eating leftovers. And if the crust sticks to the skillet, it will come off shortly afterwards, and provide you with a crispy treat. (Doing the latter on purpose is allowed.)

Paolo of Quatro Fromagio has recently devoted a post to polenta taragna, which includes his recipe (with butter, hence closer to the tradition than mine).

La polenta taragna è stata una delle grandi scoperte gastronomiche seguite al mio trasferimento da Perugia a Milano, insieme ai pizzoccheri e alla bresaola, tanto per rimanere in Valtellina. 

Mia madre faceva la polenta rigorosamente come primo piatto o meglio piatto unico, metà farina più fine e metà più grossa, condita con un sugo sostanzioso fatto con carne di maiale e salsicce. Per reazione, io preferisco la polenta bianca, con solo formaggio e servita come contorno. 

Non so quale sia la proporzione di farina gialla e farina di grano saraceno nella polenta taragna, ma io uso metà e metà di volume. Ho cominciato un po' perché mi piace e un po' perché ricevo le due farine nella mia cassettina delle granaglie, macinate di fresco con grani di produzione locale. 

Ingredienti:

• 65 g farina di granturco per polenta fioretto macinata a pietra
• 75 g farina di grano saraceno macinata a pietra
• 950 ml acqua [vedi Nota sotto]
• un po' di sale
• formaggio a scelta, in quantità a piacere, tagliato a pezzetti o grattugiato, a seconda della consistenza; naturalmente se avete accesso ai formaggi tradizionali della Valtellina, scimudin, casera, bitto, usate quelli

Nota: La polenta che faccio è piuttosto morbida. Diminuendo la quantità di acqua si ottiene una versione più soda. (Tenete presente che la polenta si rassoda quando si raffredda.)

Mettere l'acqua in una pentola e salare leggermente. Aggiungere lentamente a filo la farina gialla e poi quella di grano saraceno, mescolando col frullino a mano. Porre la pentola su fuoco medio e portare ad ebollizione, poi abbassare il calore. Continuare a mescolare col frullino fino a quando la polenta si rassoda e a quel punto passare ad usare un cucchiaio di legno.

Cuocere la polenta per 50 minuti (io di solito la cuocio qualche minuto più a lungo). Durante la cottura, mescolare spesso per evitare che la polenta si attacchi al fondo della pentola e anche che accumuli vapore e poi provochi piccole esplosioni vulcaniche.

La polenta taragna tradizionale viene condita con burro e formaggio. Io ometto il burro per avere un piatto più leggero, ma certamente aggiungo il formaggio, facendo la spesa tra quelli di mia produzione e sperimentando combinazioni diverse. Non peso il formaggio, ma una volta l'ho fatto per amor di precisione e ho usato 60 g di Asiago stagionato grattugiato. Quando uso formaggio più fresco la quantità è sicuramente maggiore. Mi piace sentire il sapore del formaggio, ma cerco di ottenere un sapore equilibrato che mi permette di servire la polenta come contorno a piatti di carne o vegetariani.

Aggiungere il formaggio al termine della cottura e mescolare per incorporarlo. Assaggiare e, se necessario, aggiungere formaggio. Servire immediatamente. Se utilizzate del formaggio a pezzetti, i frammenti che non si sciolgono completamente creano un piacevole contrasto.

Quando faccio la polenta per noi due, ne avanza sempre e la metto in un contenitore da frigo cubico in modo che poi sia facile tagliare fettine di dimensioni regolari. Per riscaldarla uso una padella di ferro ben oliata e calda nella quale adagio le fettine di polenta fredda. Se si ha pazienza, dopo qualche minuto si forma una crosticina dorata molto gustosa e dopo aver girato le fettine si ottiene lo stesso risultato dall'altro lato.

Egyptian fava bean dish

For the current edition of Cook the Books, we are reading Outlaw Cook by John Thorne, with Matt Lewis Thorne (1992). I started reading the book from the beginning, but then decided to follow my interests and jump around, choosing chapters based on their subject.

I enjoyed the chapter on plowman's lunch, which includes various recipes, like those for Welsh rabbit (yes, rabbit, not rarebit), soused cheese, and bread and cheese pudding. Considering that various types of homemade cheese are always available in my kitchen, I could have chosen one of the recipes, but I discarded the idea, because I don't like beer (birra), my knowledge of alcoholic beverages is very limited, and my knowledge of ale or stout is nil, so choosing a pairing with my cheese would have been a wild guess.

I read the chapter Monet À Table, which is the review of a book about the cooking journals of Claude Monet, with a special perspective: by pure chance, we are watching the TV mini-series The Impressionists, where an old Claude Monet tells the story of his career and his relationship with Renoir, Bazille, Degas, Cézanne and Manet to a journalist, and at some point offers him some of his homemade plum brandy. From Thorne's piece I learned that Monet grew greengage plums for it in his two-and-a-half-acre walled kitchen garden.

I also read with interest the chapter on ful medames, "Egypt's national dish" (piatto nazionale egiziano). From reading this post by Kalinda of Wheat-Free Meat-Free, I knew that ful medames is prepared using a special kind of small fava beans, but I had other plans. The dish had been for a while on my to do list as a way of making use of the locally grown and dried fava beans (fave secche) that I get as part of my mostly-grain CSA and that I have mentioned in the post about macco di fave.

You can read the chapter and Thorne's recipe. I halved the quantity of fava beans, used the optional lentils (lenticchie) as a belated homage to the New Year, and then adjusted the other ingredients to my taste:

• 1 cup of dried fava beans, soaked for 16 hours (or as needed) in plenty of water, then skin removed
• 1/4 cup green lentils
• 1 1/2 tablespoon olive oil
• 2 tablespoons freshly squeezed lemon juice, plus to taste
• a pinch of dried lemon zest (this was my idea)
• a generous pinch of ground cumin (from freshly toasted and ground cumin seeds), plus to taste
• a garlic clove (spicchio d'aglio), peeled and chopped
• salt and freshly ground black pepper, to taste
• two small sprigs of fresh parsley (prezzemolo)

Bring to a boil 3 cups of cold water in a saucepan. Add the fava beans and cover. Bring back to a boil, cook for 10 minutes then lower the heath, add the lentils, cover again and simmer until the legumes are soft and can easily be mashed. (I cooked them for 50 minutes.) Note: I realized afterward that this 10 minutes are planned within the context of fava beans still in their skin. The next time I prepare this dish, I will add fava beans and lentils to the boiling water at the same time. This may well affect the cooking time. Mash the legumes roughly with a potato masher and let cool. The mash will absorb the water as it cools.

Pour the legumes into the food processor and add olive oil, lemon juice and zest, cumin, garlic, a bit of salt and pepper and parsley. Process until garlic and parsley are well distributed, then taste and adjust salt and pepper. Refrigerate until ready to use. Adjust lemon juice and cumin after the ful medames has rested for a while (I added more cumin). I think that the flavor matures and improves with time (at least one day).

The photo shows a plate I prepared for my husband's lunch, which included, besides the ful medames, drained homemade kefir (think of labneh made with kefir instead of yogurt), a hard-boiled egg (uovo sodo) and slices of my homemade challah.

regalo di Natale e crostata delle Feste

Christmas gift and a Holiday tart

Che cosa ti ha portato Babbo Natale? (what did Santa bring you?) is the question often asked this time of the year. In the past, I had expressed the wish to have a magic wand. This year, Santa brought me one: Babbo Natale mi ha portato una bacchetta magica.

Here it is, resting next to some of the cards (biglietti) I received as part of the North Redwoods Book Arts Guild Holiday card exchange (this photo album shows them all). They are all beautiful and they make up this year Holiday decor at our house.

On Christmas Eve (vigilia di Natale) I made a crostata with apple, rhubarb and strawberry preserves (conserva di mele, rabarbaro e fragole) and decorated the surface with Babbo Natale shapes (instead of the traditional lattice).

Speaking of Babbo Natale, don't you think he could live in this pretty house?

I know, those are not reindeer (renne), but elk (wapiti), there is no snow (neve), and the house is actually the Little Red Schoolhouse in Stone Lagoon, CA. But still, I like to think that Santa would enjoy living here. (The Roosevelt Elk are free to roam and they do, often crossing Hwy 101, which runs nearby.)
