Being a winter squash hoarder means I still have "raw material" (materia prima) for soup, though the calendar says it's spring (primavera). Am I really the only one still drawing from a stash of squashes carefully stored during the winter? I suspect not. In any case, let's face it: it's time to use them. If you live on the other hemisphere, then you have squashes from the new crop to work with.

I met this recipe in the waiting room of my doctor's office. A quick look at the list of ingredients told me that the recipe deserved a test. While I have used the basic combination of ingredients many times, I have never made the soup as instructed: I use longer cooking times and follow my tried-and-true method of roasting squash or pumpkin before adding it to the soup. More recently, I have also added a couple of "special" ingredients to the list, which runs as follows:

• 1 3/4 lb. / 800 g flesh from one large or two small roasted squashes (see Note 1 below)
• 1 tablespoons / 15 ml olive oil
• 3/4 large onion, chopped + 1/2 large leek cut into half-moon slices OR 1 large onion, chopped
• 1 1/2 tablespoons chopped fresh ginger (zenzero)
• A 2-inch / 5 cm piece of kombu, optional but recommended
• 4 large garlic cloves, minced
• 2 teaspoons / 10 ml ground coriander
• 2 cups / 475 ml homemade chicken stock/broth OR vegetable broth
  
• 1/2-3/4 cup / 120-175 ml liquid from cooking beans (see Note 2 below)
• 1/2 cup / 120 ml homemade borș (see Note 3 below)
• Water, as needed
• Sea salt and freshly milled black pepper, to taste

Note 1: I have made this soup with different types of squash and pumpkin and in my opinion, the best performers are gray or green kabocha and in general squashes that, like the kabocha, are fairly dry. The version in the photo was made with a mix of butternut and white acorn and it was really nice. Pumpkin performs last in my informal hit parade.

Note 2: whenever I cook beans, I set aside the leftover cooking liquid and use it in soups.

Note 3: borș and bean cooking liquid are of course optional. You can make the soup without them, using some more broth and water.

How to prepare the winter squash(es)
Preheat the oven to 375 F. If the squash is hard, pre-process it as follows: pierce it with a blade in a few places, place it on a baking sheet lined with a silicone baking mat, and bake it for 15 minutes, then let is cool slightly. This makes it easier to cut it in half.

Cut the squash (pre-processed or raw) in half lengthwise and remove the seeds (a grapefruit spoon is my preferred tool for this task). Place squash halves on the silicone baking mat, cut side down. Put back in the oven and bake until squash is tender, easily pierced with a blade. Let the squash cool and then scrape the flesh off the skin, again using a grapefruit spoon.

Weigh the amount required by the recipe. If you have some leftover, you can use it to make these scones or this bread (a slice of which is visible next to the soup bowl in the photo above).

How to prepare the soup
Rinse leek well in a colander. Warm up olive oil in a soup pot, then add onion and leek and stir well to coat. Let cook for a few minutes, then add the ginger and stir. Let cook gently for another 8 minutes, stirring often. Add kombu, garlic and and coriander, stir, and cook for a couple of  minutes.

Place squash flesh in the pot, stir and then add the three types of liquid, plus enough water to cover. Bring to a boil, covered, then turn down the heat so the soup bubbles gently. Cook for 25 minutes, then remove pot from heat. Season with a bit of salt and pepper and stir. Let the soup rest, covered, for 15 minutes, then purée with an immersion blender. Add water, if needed, to obtain a soup of the desired consistency. Adjust salt and pepper, if necessary.

Making the soup at least a few hours before you are planning to serve it will give it enough time to rest and ripen. Reheat the soup before serving it — possibly topped with a sprinkling of dukkah.

Essendo una che accumula zucche, ho ancora della "materia prima" per zuppe, anche se il calendario dice che è primavera. Credo di non essere l'unica che ancora centellina il suo mucchietto di zucche tenuto da parte con cura durante l'inverno. Comunque sia, devo accettare il fatto che vanno consumate. Chi invece vive nell'altro emisfero ha accesso al nuovo raccolto.

Questa ricetta l'ho incontrata nella sala d'attesa del mio dottore. Uno sguardo rapido mi disse che meritava una prova. Ho usato la combinazione degli ingredienti molte volte, ma non ho mai preparato la zuppa secondo le indicazioni della ricetta: utilizzo infatti tempi di cottura più lunghi e il mio metodo provato di cuocere al forno la zucca prima di aggiungerla alla zuppa. Di recente, ho anche aggiunto un paio di elementi "speciali" alla lista

Ingredienti:

• 800 g polpa di zucca arrosto da una o due zucche (vedi Nota 1)
• 1 cucchiaio / 15 ml olio EV d'oliva
• 3/4 cipolla grossa tritata + 1/2 porro grosso tagliato a mezzelune O 1 cipolla grossa, tritata
• 1 1/2 cucchiaio radice di zenzero tritata
• un pezzo di kombu (5 cm), facoltativo ma raccomandato
• 4 spicchi d'aglio grossi, tritati
• 2 cucchiaini / 10 ml coriandolo in polvere
• 475 ml brodo di pollo [fatto in casa] oppure brodo vegetale [fatto in casa]
• 120-175 ml liquido di cottura dei fagioli (vedi Nota 2)
• 120 ml borș fatto in casa (vedi Nota 3)
• acqua, q.b.
• sale fino e pepe nero macinato fresco, q.b.

Nota 1: Ho preparato questa zuppa con tipi diversi di zucca e secondo me viene meglio con la kabocha (verde o grigia) e in generale con zucche che hanno la polpa piuttosto secca. La versione della foto l'ho preparata con un misto di zucca butternut e zucca acorn bianca: ottimo connubio.

Nota 2: quando cuocio i fagioli metto da parte il liquido di cottura e lo utilizzo nelle zuppe.

Nota 3: il borș e il liquido di cottura dei fagioli sono facoltativi. Potete preparare questa zuppa senza di essi, utilizzando un po' più di brodo e acqua.

Preparare la zucca
Scaldare il forno a 190 C. Foderare una placca da forno con un tappetino di silicone per il forno.

Per evitare di far saltare la lama al coltello nel tentativo di tagliare a metà una zucca, bucarla in alcuni punti con una lama appuntita e metterla  in forno sulla placca preparata per 15 minuti. Quando si è intiepidita abbastanza da poterla toccare, procedere come descritto nel paragrafo successivo.

Se utilizzate una zucca che si taglia facilmente, saltate il passaggio descritto nel paragrafo precedente. Tagliare la zucca a metà e usare un cucchiaino da pompelmo per rimuovere i semi.

Metterla in forno, sulla placca preparata, con la parte tagliata in basso e cuocerla finché non è morbida. Toglierla dal forno e, quando è tiepida, spesso la pelle viene via facilmente. Altrimenti usare il cucchiaino da pompelmo per rimuovere la polpa.

Pesare la quantità richiesta dalla ricetta. Se vi avanza della zucca, potete utilizzaral per preparare questi scone o questo pane (una fetta del quale è visibile accanto alla ciotola con la zuppa nella foto qui sopra).

Preparare la zuppa
Sciacquare bene il porro per eliminare ogni residuo di terra. Rinse leek well in a colander. Scaldare l'olio in una pentola da zuppa, poi aggiungere cipolla e porro e mescolare bene. Far cuocere alcuni minuti e poi aggiungere lo zenzero e mescolare. Far cuocere a fuoco dolce per altri 8 minuti mescolando spesso. Aggiungere kombu, aglio e coriandolo, mescolare e cuodere per un paio di minuto.

Mettere la polpa di zucca nella pentola e versare i tre liquidi, più abbastanza acqua da coprire la zucca. Mettere il coperchio e portare a bollore, poi abbassare il calore e far cuocere dolcemente per 25 minuti. Rimuovere la pentola dal fuoco, condire con un po' di sale e pepe e mescolare. Far riposare la zuppa per 15 minuti, poi usare il frullatore a immersione. Aggiungere acqua, se necessario, fino ad ottenere la consistenza desiderata. Correggere sale e pepe, se necessario.

Se preparate la zuppa alcune ore prima di servirla, le darete modo di riposare e maturare. Riscaldare la zuppa prima di servirla, magari con una spolverata di dukkah sulla superficie.

With a name as sensuous as caldo verde (literally, green broth), a soup's future is secure. Who doesn't want to eat some caldo verde? I certainly wanted to, but there was a little glitch: I don't eat sausages, I stopped eating them years ago, for various reasons. I have nothing against chouriço or linguiça, which are called for in the recipe for caldo verde, a traditional Portuguese soup, often referred to as Portuguese kale soup. And I don't like to eat "imitation" something, so I set about making a soup "inspired by" caldo verde, without sausages. I didn't go all the way vegetarian, because I used some of my homemade light chicken stock, but if you substitute that with vegetable broth, you have a vegetarian version of this satisfying soup, perfect whenever you need a good plan to use kale overflowing from your garden.

I actually used a mix of rainbow chard (bietola) from Redwood Roots Farm and Red Russian kale (cavolo riccio) from my garden, cut as shown in this video (starts at around 7:45" — as an aside, I disagree with her assessment of chard stalks flavor: I like making this dish with them).

For my rendition, I selected this recipe on the BBC site as guide, then, as usual, went my own way, giving precedence to ingredients I had available. In particular, instead of using an onion, I took advantage of freshly harvested baby leeks (porri novelli) and of shallots (scalogni) from my garden's 2012 production. Locally grown, dried shiitake mushrooms add a nice note to the rustic soup and contribute to its earthy color.

Ingredients:

• 7 dried shitake mushrooms
• 3 baby leeks, white and light green portion, sliced and thoroughtly rinsed
• 3 medium shallots, finely chopped
  
• Alternative to leeks and shallots: 1 large onions, finely chopped
• Olive oil of good quality
• 2 cloves garlic, peeled and crushed
• 1/2 lb potatoes, well scrubbed and diced
• 1 parsnip, well scrubbed, trimmed, and thinly sliced
• 2 cups light chicken stock or vegetable broth, possibly homemade + water as needed
• 1 bay leaf
• Sea salt and freshly ground black pepper, to taste
• 1 bunch of kale and rainbow chard (see below for quantity details)
  
• A generous squeeze of fresh Meyer lemon juice

Before you start preparing the vegetables, place mushroom in a bowl and cover with warm water. Let them fully rehydrate.

Warm up some olive oil in a soup pot and gently cook baby leeks and shallots until soft, stirring often. Drain mushrooms, remove stems (and save to make broth or stock), and slice caps. Add to the pot mushrooms and the water where they soaked, stir and cook for a few more minutes.

Add potatoes and parsnip to the pot and stir well. Add bay leaf, stock and enough water to cover the vegetables well. Bring to a boil and cook gently until potatoes and parsnip are tender and easily smashed with the back of a spoon.

While the soup cooks, wash the greens and separate the leaves from the stalks. (Set aside the chard stalks and make this dish or something else with them.) Thinly slice the greens as shown in the video mentioned above. Basically, chiffonade. Make a stack of leaves, then roll it lengthwise. Hold the roll with one hand and with the other cut thin slices across (as if it were a salame). Make another stack and repeat. I am not a paragon of knife skills as you can see from the photo: the greens should be cut a bit more thinly, if possible.

Season soup with salt and pepper, to taste, then process with an immersion blender. I left some texture in the soup. Add some hot water, if the soup is very dense. Bring soup back to a boil.

My guide recipe instructs to blanch the greens, but I didn't see the need to involve another pot, because the greens I use don't taste bitter to me.

Add as much of the pile of cut greens as the soup can support and as you prefer. As you can see from the photo, I didn't use a light hand here. Simmer for a few minutes, until the greens are tender. Add the Meyer lemon juice and stir well. Adjust salt and pepper and serve this warming and satisfying soup. Should I mention how healthy an nutritious it is?

This was not my first foray into Portuguese cuisine. Some time ago, I followed detective Pepe Carvalho's instructions and made an excellent pot of caldeirada (fish soup).

Con un nome sensuale come caldo verde (brodo verde), il successo di una zuppa è assicurato. Voglio dire: chi non vuole assaggiare del caldo verde? Certamente io volevo assaggiarlo, ma c'era un piccolo ostacolo: ho smesso di mangiare salsicce, per motivi vari. Non ho nulla contro chouriço o linguiça, che vengono elencati come ingredienti del caldo verde, zuppa tradizionale portoghese. E non mi piace mangiare prodotti che sono l'imitazione di qualcos'altro, quindi ho preparato una zuppa "stile" caldo verde, senza salsicce. Non ho fatto proprio una versione vegetariana, dal momento che ho usato del brodo di pollo, ma se lo sostituite con brodo vegetale, il risultato è una versione vegetariana di questa ottima zuppa.

Il verde nel mio caso è un misto di bietola "arcobaleno" che ho raccolto a Redwood Roots Farm e cavolo riccio "Red Russian" raccolto dal mio orticello. Le foglie le ho tagliate, come si vede in questo video (cominciando a 7:45" — tra parentesi, non sono d'accordo con il giudizio della chef sulle coste: a me piacciono e le preparo gratinate).

Come guida per la mia versione, ho scelto una ricetta sul sito della BBC, poi, come al solito, ho fatto di testa mia, dando la precedenza ad ingredienti che avevo a disposizione. In particolare, invece di usare una cipolla, ho sfruttato dei porri novelli che avevo raccolto insieme alla bietola e degli scalogni dal mio orticello (raccolto del 2012). Funghi shiitake secchi di produzione locale hanno contribuito una nota rustica (e il loro colore).

Ingredienti:

• 7 funghi shitake secchi
  
• 3 porri novelli, la parte bianca e verde chiaro, tagliati a fettine e sciacquati accuratamente
• 3 scalogni medi tritati
• In alternativa a porri e scalogno: 1 grossa cipolla tritata
• 2 spicchi d'aglio pelati e schiacciati 
• Olio extra-vergine d'oliva
• 225 g patate, lavate accuratamente e tagliate a dadi
• 1 pastinaca, lavate accuratamente e tagliata a fettine
• 475 ml brodo di pollo o brodo vegetale fatto in casa + acqua
• 1 foglia d'alloro
• Sale fino e pepe macinato fresco, q.b.
• 1 mazzo di bietola o cavolo riccio (vedi sotto per dettagli)
• Succo di limone (possibilmente Meyer)

Mettere i funghi in una ciotola, coprirli con acqua calda e farli reidratare.

Scaldare dell'olio d'oliva in una pentola capiente e aggiungere porri e scalogno. Cuocere a fuoco dolce fino a quando sono teneri, mescolando spesso. Scolare i funghi, rimuovere i gambi (e metterli da parte per usarli come ingredienti in un brodo) e affettare i cappelli. Aggiungere alla pentola i funghi e l'acqua nella quale sono stati reidratati, mescolare bene e cuocere per qualche altro minuto.

Aggiungere patate e pastinaca e mescolare bene. Aggiungere alloro, brodo e abbastanza acqua in modo da coprire bene le verdure. Portare a bollore e cuocere fino a quando patate e pastinaca sono tenere e si possono schiacciare facilmente con un cucchiaio.

Mentre la zuppa cuoce, lavare bietola e cavolo riccio e separare le foglie dagli steli. (Mettere da parte le coste e prepararle gratinate o in altro modo.) Tagliare le foglie a nastri fini come si vede nel video menzionato prima. In pratica, fare una piccola pila di foglie e poi arrotolarle per il lungo. Tenere il rullo con una mano e con l'altra, tagliare fettine fini (come se fosse un salame). Fare un'altra pila di foglie e ripetere. La foto dimostra che non eccello col coltello: i nastrini dovrebbero essere più fini.

Condire la zuppa con sale e pepe, a seconda del gusto. Usare il frullatore ad immersione. Io non ho reso la zuppa proprio omogenea, ma l'ho lasciata un po' rustica. Aggiungere acqua calda, se la zuppa è troppo densa. Riportarla a bollore.

La ricetta guida dice di sbollentare le foglie, ma io non ho ritenuto necessario coinvolgere un'altra pentola dal momento che non percepisco l'amaro nelle verdure in questione.

Aggiungere alla zuppa tante manciate di nastrini quante la zuppa assorbe o a seconda del vostro gusto. Come si vede dalla foto, io sono stata generosa. Cuocere per alcuni minuti, fino a quando le verdure appena aggiunte sono tenere. Spruzzare del succo di limone e mescolare bene. Correggere sale e pepe e servire quest'ottima zuppa, che è anche nutriente e salutare.

comfort food for rough days

For the current edition of Cook the Books, we are reading Heartburn by Nora Ephron (1983). I had heard about the book, so I was glad to see it on the Club's list. The writing is witty and engaging, and as a reader, you really want to know how the story will unfold. It was easy to go from cover to cover, chuckling here and there, and cheering at the final scene, when a lime pie is sacrified on the altar of justice.

While I don't want to diminish in any way the importance of the book from a sociological perspective (it was published almost 30 years ago), as a reader, I was not left wanting for more. The shallowness of the characters makes them forgettable.

One aspect of the novel that I liked a lot is the way the recipes are woven into the text, part of the narrative of the protagonist, Rachel Samstat, who is a successful cookbook author. I wasn't particularly inspired to try any of the the recipes, though. In reading the story, I was more focused on thinking: what would I do if something like that happened to me? "That" means discovering that your husband is in love and having an affair with a woman you know, while you are pregnant with your second child and the first one is a toddler.

When I am upset, cooking in and of itself is helpful, in that it makes me focus on something other than whatever it is that is causing an emotional tornado. And I tend to cook dishes that are comforting to me, something hot and with lots of vegetables, often a soup. The recipe I am presenting here is a classic example. I had made it a few months ago once and even took a photo (see below), but forgot to write down the details. I really liked it, so I went back to it.

The inspiration for my zimino di fagioli came from a recipe called zimino di ceci that I read on the Accademia Italiana della Cucina site. The dish is traditional in Liguria and it is made with chickpeas (ceci). This version of the recipe by Clifford Wright includes an explanation of the name of the soup, which is sometimes called ceci in zimino.

I like chickpeas, but I prefer to use beans (fagioli), because I have access to a variety of great organic beans of local production, like the speckled bayo on the photo, which are very good in soups.

The original recipe uses dried mushrooms (funghi secchi) and that's what I used the first time I made the dish. However, I am not a big fan of dried mushrooms, so when I took up the recipe again, I decided to use a mix of fresh mushrooms, including some locally grown oyster mushrooms. The photo below shows the mushrooms on their growing medium.

I recently signed up for a special winter CSA share. I will tell you more about this soon. For now, suffice to say that I have access to some gorgeous rainbow chard (bietola). In the balance of ingredients, with respect to the original recipe, I chose to give much more prominence to the chard and a bit more to the mushrooms.

Ingredients:

• 3.5 oz / 1/2 cup / 100 g speckled bayo beans; alternatively, I would have used borlotti or canario [see below how to cook beans with aromatics]
• Olive oil
• 1 shallot, finely chopped + half a leek, white and light green portion, cut into half moons and carefully rinsed (save the darker green portion to make broth or stock) [the original recipe calls for an onion, thinly sliced]
• A celery rib, finely chopped
• A garlic clove, thinly sliced
• 8 oz. / 225 g mixed fresh mushrooms: I used half oyster and half cremini, sliced
• 1 cup roasted strained tomatoes (thawed, since they were made last year and frozen) [the original recipe calls for 3-4 ripe tomatoes, peeled, deseeded and chopped]
• 10.5 oz. / 300 g rainbow chard, weighed after the long stalks are removed (save those and use them to make a gratin)
• Sea salt, to taste

How to cook dry beans
The way I cook beans for further use comes from Vegetarian Cooking for Everyone by Deborah Madison (Beans with Aromatics). After soaking half a cup of dry beans for several hours or overnight in enough water to cover them by about an inch (I use two cups), empty the whole bowl into a saucepan and add

• Half of a small onion (or a quarter of a medium one), halved
• A bay leaf
• A small clove of garlic, sliced
• A couple of sprigs of fresh parsley

Bring the water to a lively boil quickly, and keep it there for five minutes, then turn down the heat and let the beans simmer, covered, until they are ready. How long this takes depends on the type of beans and their freshness. Let them cool in their broth, then remove the aromatics and discard them. Let the beans rest in their cooking broth until ready to use.

How to cook the soup
Warm a bit of olive oil in another saucepan, then add shallot, leek and celery and stir well. Cook for a few minutes, then add the garlic.

After a couple more minutes, when the garlic smells fragrant, add the mushrooms and stir. Turn up the heat a bit. When the mushrooms start releasing water, stir well for a minute, then add the tomatoes and stir well.

Bring to a simmer, then add the beans, drained, and stir. Add the chard leaves, cut into ribbons 1/2-inch (1.25 cm) wide and stir. It is fine if the chard leaves have water clinging to them. Cook for 10 minutes, or until the chard is nice and tender, adding some or all of the bean cooking liquid to make a (rather dense) soup or, if you prefer, some water or vegetable broth.

Adjust salt and serve immediately.

Serving options:

1. The original recipe suggests serving the soup with croutons.
2. I have toasted a couple of small sliced of bread, put those on the bottom of a bowl and ladled the zimino on top (like in the photo on this page).
3. As you can see from the photo above, in my earlier rendition, I served the zimino with some freshly grated cheese sprinkled on the surface.
4. The last option is a suggestion for repurposing leftovers and it deserves a post of its own, so be patient for a couple of days and then you'll find out.

I am not sure Rachel Samstat would like my zimino di fagioli, since it is something quite different from the dishes she describes in the book. On the other hand, considering how much misery living in her "set" has caused, maybe she ought to consider a change of scenery and a change of cuisine.

The smell of roasted chestnuts (caldarroste) more than anything else means autumn (autunno) to me. Every year, my mother would buy a large case of chestnuts from someone in Casperia, the village in central Italy where she grew up. We would then consume them over the span of several weeks: she would roast some one day and boil them another, and we always ate them at the end of dinner, as a special dessert. She never used them as an ingredient.

Street sellers of roasted chestnuts are a common sight in Italy, their presence announced far and wide by the irresistible aroma of the hot product they sell. You buy a cartoccio (paper cone) of roasted chestnuts not only to eat the fragrant nuts, but also to warm up your hands.

I am lucky enough that I can count on two local growers bringing chestnuts to the farmers' market (I will add a photo when I manage to shoot a nice one) and in the photo below you can see a detail of one of the two market stalls.

Differently from my mother, I like to use them as ingredients, as in this dish and the soup below.

Paul's mix, a medley of organic beans

For the bean component of the soup, I used Paul's mix, a signature blend of various kinds of organic beans already mentioned in this post and also this one.  And for the potato portion, I used freshly dug potatoes from my garden.

Instead of a photo of raw potatoes, I am sharing one of my potato plants, taken at the end of January. As I have said before, I love growing potatoes because they are pretty and digging them is as satisfactory as participating in a treasure hunt.

The recipe I am proposing is a combination of elements from a couple of recipes I read (one and two, in Italian) that use the base ingredients I had chosen (though one calls for dry chestnuts), plus my own personal tastes and my preference for simple dishes.

Ingredients:

• 3.5 oz / 1/2 cup / 100g Paul's mix beans or borlotti [see below how to cook beans with aromatics]
• 8 oz. / 1/2 lb. / 225 g fresh chestnuts
• 1 bay leaf
• Olive oil
• 1 shallot, finely chopped
• Half a leek, white and light green portion, cut into half moons and carefully rinsed (save the darker green portion to make broth or stock)
• 4 sage leaves, thinly sliced
• 1 teaspoon finely chopped fresh rosemary
• 9 oz. / 250 g potatoes, well scrubbed and cubed (I used a mix of Purple Majesty and Yukon Gold from my garden)
• 1 tablespoon tomato paste
• 1 cup / 240 ml  homemade chicken stock/broth or vegetable option (in which case, this soup is vegetarian)
• Sea salt and freshly milled black pepper, to taste

How to cook dry beans
The way I cook beans for further use comes from Vegetarian Cooking for Everyone by Deborah Madison (Beans with Aromatics). After soaking half a cup of dry beans for several hours or overnight in enough water to cover them by about an inch (I use two cups), empty the whole bowl into a saucepan and add

• Half of a small onion (or a quarter of a medium one), halved
• A bay leaf
• A small clove of garlic, sliced
• A couple of sprigs of fresh parsley

Bring the water to a lively boil quickly, and keep it there for five minutes, then turn down the heat and let the beans simmer, covered, until they are ready. How long this takes depends on the type of beans and their freshness. Let them cool in their broth, then remove the aromatics and discard them. Let the beans rest in their cooking broth until ready to use.

How to cook the chestnuts
Place chestnuts in a saucepan, cover abundantly with water and add the bay leaf. Bring to a boil and cook gently until they are tender. Keep the chestnuts in the cooking water and take out one at a time to peel. Use a sharp knife with a pointed blade to remove the shell, then the skin. Set aside. (If a chestnut breaks, while being handled, it is fine.)

How to cook the soup
Warm up some olive oil in a saucepan, then add shallot and leek. Stir well to coat. After a couple of minutes, add sage and rosemary and stir. After a few more minutes, add the potatoes, beans with their cooking liquid, tomato paste and broth, plus enough water to cover.

Bring the soup to a boil, covered, then turn down the heat and cook for 15 minutes. Add the chestnuts and cook for another 15-20 minutes, or until the potatoes are very tender (you can easily mash one with a spoon on the side of the pan).

Remove from the heat and purée using an immersion blender,  if possible. If you use a food processor or blender, purée in small batches and use extreme care. You may opt for a minimal blending so not all the ingredients are completely puréed. This makes for an interesting texture. Add more water, as needed, to make the soup reach the desired consistency. Adjust salt and pepper to taste and serve.

What I like about this soup is that the flavor of each main ingredient is perfectly clear to the palate and the chorus sings beautifully.

Il profumo delle caldarroste è il più chiaro segno d'autunno. Ogni anno, mia madre comprava una cassetta di castagne a Casperia, il paese dov'era cresciuta. Nelle settimane successive, una volta le faceva arrosto e la volta dopo bollite e le mangiavamo come dessert a cena. Mia madre non usava mai le castagne come ingrediente.

Sono fortunata dal momento che ci sono ben due produttori locali di castagne e le posso acquistare al farmers' market.

A differenza di mia madre, a me piace usare le castagne come ingrediente, per esempio in un piatto con fagioli e funghi e nella zuppa qui sotto.

Paul's mix: fagioli bio di diversi tipi

Per la componente fagioli della zuppa ho usato "Paul's mix," un misto di vari tipi di fagioli bio del quale ho parlato in precedenza in questo post e anche quest'altro.  E per la componente patate ho usato quelle che ho raccolto più di recente dal mio orticello.

Invece di una foto di patate crude, ve ne mostro una scattata nel mio orticello a fine Gennaio. Mi piace un sacco raccogliere le patate: è come partecipare ad una caccia al tesoro speciale.

La ricetta che propongo è nata dalla combinazione di idee tratte da un paio di ricette trovate online (una e due, in italiano) che fanno uso degli ingredienti di base che avevo scelto (anche se una delle ricette prevede le castagne secche) più i miei gusti personali e la mia preferenza per i piatti semplici.

Ingredienti per i fagioli:

• 100 g di fagioli borlotti secchi (mi rendo conto che il Paul's mix in Italia non si trova)
• mezza cipolla piccola (o un quarto di cipolla media)
• una fogliolina d'alloro
• un piccolo spicchio d'aglio tagliato a fettine
• un paio di steli di prezzemolo               

Altri ingredienti per la zuppa:

• 225 g di castagne
• una foglia d'alloro
• olio d'oliva
• uno scalogno tagliato a pezzetti
• mezzo porro (la parte bianca e verde chiara), tagliato a mezzelune e ben sciacquato (mettere da parte la porzione verde scura per quando fate il brodo)
• 4 foglie di salvia tagliate a filetti
• 1 cucchiaino di aghi di rosmarino tagliati a pezzetti
• 250 g di patate fresche pulite bene e tagliate a cubetti (io ho usato un misto di patate e pasta gialla e a pasta viola)
• 1 cucchiaio (15 ml) di concentrato di pomodoro
• brodo di pollo o vegetale fatto in casa (nel qual caso la zuppa è vegetariana)
• sale fino
• pepe macinato fresco

Cuocere i fagioli
Il metodo che uso per cuocere i fagioli secchi viene da Vegetarian Cooking for Everyone di Deborah Madison (Beans with Aromatics). Dopo aver tenuto in ammollo 100 g di fagioli per diverse ore o, meglio, tutta la notte, in abbastanza acqua da coprirli per 2,5 cm (io ne uso 475 ml), verso il tutto in una pentola e aggiungo gli odori.

Portare a bollore vivace e mantenerlo per 5 minuti, poi abbassare il calore e far cuocere, coperti, fino a quando i fagioli non sono teneri. Il tempo necessario dipende dal tipo di fagioli e dalla loro freschezza. Far freddare i fagioli nel liquido di cottura, poi rimuovere gli odori e scartarli. Lasciare i fagioli nel liquido di cottura fino a quando non li utilizzate.

Cuocere le castagne
Metter le castagne in una pentola, coprire abbondantemente d'acqua e aggiungere l'alloro. Portare a bollore e cuocere a fuoco dolce fino a quando le castagne sono morbide. Tenere le castagne nell'acqua di cottura e tirarne fuori una alla volta per pelarla. Usare un coltello con la punta per rimuovere la buccia e la pellicina. Mettere da parte. (Non è necessario che le castagne rimangano intere.)

Cuocere la zuppa
In una pentola far scaldare dell’olio e aggiungervi lo scalogno e il porro. Mescolare bene e, dopo un paio di minuti, aggiungere la salvia e il rosmarino. Dopo qualche minuto, aggiungere le patate, i fagioli con il loro liquido di cottura, il concentrato di pomodoro e il brodo, più abbastanza acqua da coprire gli ingredienti.

Mettere il coperchio e portare a bollore, poi regolare il calore per mantenere un leggero bollore. Cuocere per 15 minuti, poi aggiungere le castagne. Cuocere per altri 15-20 minuti, o fino a quando i pezzi di patata siano morbidi (cioè potete schiacciarli con il dorso di un cucchiaio di legno contro la parete della pentola).

Togliere la pentola dal fuoco, e ridurre le verdure a purè con il frullatore ad immersione, più o meno a seconda della consistenza che si preferisce. Aggiungere acqua quanto basta per ottenere una zuppa della consistenza desiderata. Regolare sale e pepe a piacere e servire la zuppa ben calda.

Quello che mi piace di questa zuppa è che il sapore di ognuno degli ingredienti principali è perfettamente chiaro al palato e tutti insieme fanno un bel coro.

jota is a traditional soup from Trieste

Region after region, via a representative city for each one, in our Abbecedario culinario d'Italia (Italian Culinary ABC) tour, we have reached the northeastern Italian city of Trieste, capital of the Friuli-Venezia Giulia region. I have been to Trieste only once, many years ago, on the way back from a family trip to Croatia. When we reached Trieste, it was raining so hard, we could not get out of the car to walk around. I guess Trieste in another one of the famous Italian cities that one day I will explore with leisure.

As wikipedia notes:

At the beginning of the 20th century, Trieste was a buzzing cosmopolitan city frequented by artists and philosophers such as James Joyce, Italo Svevo, Sigmund Freud, Dragotin Kette, Ivan Cankar, Scipio Slataper, and Umberto Saba. The city was the major port of the Austrian Riviera, and perhaps the only real enclave of Mitteleuropa south of the Alps. Viennese architecture and coffeehouses still dominate the streets of Trieste to this day.

When, earlier this year, I read this nice post on jota by Frank of Memorie di Angelina, I immediately put the traditional bean, sauerkraut and potato soup (zuppa di fagioli, crauti acidi e patate) from Trieste in my to-do list.

For the bean component of the soup, I used Paul's mix, a signature blend of various kinds of organic beans most recently seen in this post. And for the sauerkraut portion, I used my homemade sauerkraut.

As detailed in the diagram I drew for the post on homemade kefir, a possible use for kefir whey is in the preparation of sauerkraut. The inspiration came from a post on this topic by Claudia of Honey from Rock, and the instructions came from this post. I made my batch of sauerkraut with one cabbage and also a small red beet, so it is purple. It also has a piece of kombu (seaweed: alga). Potatoes from my little garden are the third ingredient of my rendition of jota.

There are various versions of this soup, from simple ones, like what I made, to richer ones (like Frank's), which include the use of pork. The recipe I sort of followed is on this page (in Italian). To cook the dry beans, I followed my usual recipe (given below).

Ingredients:

• 3.5 oz / 1/2 cup / 100 g Paul's mix beans; alternatively, I would have used borlotti [see below how to cook beans with aromatics]
• 9 oz. / 250 g homemade sauerkraut
• 2 garlic cloves, smashed
• Olive oil
• Ground cumin
• Sea salt and freshly ground black pepper, to taste
• 2 potatoes: I used two medium Yukon Gold potatoes
• homemade chicken stock/broth or vegetable option (in which case, this soup is vegetarian)

How to cook dry beans

In a saucepan, warm up a bit of olive oil, then add  the garlic cloves. Let it cook for a couple of minutes, then remove and discard. Add the sauerkraut to the saucepan and then pour into it enough water to cover. In my case, that was 1/2 cup (120 ml) of water. Sprinkle a pinch of cumin and one of black pepper on the sauerkraut, then let it simmer for 1/2 hour to consume the water. If it becomes dry, add more water. I didn't add salt here since the sauerkraut is already salted and I didn't rinse it before use. However, next time I will try rinsing the sauerkraut to taste the difference.

After 15 minutes, heat the beans with their cooking liquid and also 1/2 cup (120 ml) of stock or broth. Cut the potatoes into small pieces and add to the beans. Cook for 15 minutes or until the potatoes are soft. Process with an immersion blender (more for a smoother texture, less for a chunkier one). Add the puréed beans and potatoes to the sauerkraut and stir well. Add enough water to stock or broth to reach the desired consistency and bring the soup to piping hot temperature. Adjust salt and pepper and serve (with croutons if you wish).

The original recipe includes the addition of a garlic-flavored roux. I skipped it and, instead, added an extra garlic clove to the oil in which I cooked the sauerkraut.

This soup has a very interesting flavor, definitely influenced by the sauerkraut. I enjoyed a small dose of it, like in the photo. The next time I make it, I will try rinsing the sauerkraut first, as Frank suggests. I cannot say that my jota was overly sour, but this being my first taste of it, I don't have a standard of comparison. So, definitely this is a story to be continued...

Grazie al prezioso Abbecedario culinario d'Italia siamo arrivati a Trieste, in Friuli-Venezia Giulia. Sono stata a Trieste solo una volta, tanti anni fa, di ritorno da una vacanza in Croazia con la mia famiglia. Quando siamo arrivati pioveva talmente forte che non siamo riusciti a scendere dall'auto per fare una visita. Poi non ho più avuto occasione di andarci e quindi Trieste è un'altra delle belle città italiane che visiterò un giorno con calma.

Qualche mese fa, lessi questo questo post sulla jota di Frank di Memorie di Angelina e decisi immediatamente che l'avrei provata.

Per la componente fagioli ho usato Paul's mix, un misto di varie qualita di fagioli bio che ho presentato in questo post. E in quanto a crauti acidi ho usato quelli che ho fatto io ispirata da questo post di Claudia di Honey from Rock seguendo le istruzionie in questo post. La nota particolare di tale ricetta e l'utiizzo di siero di latte derivato dalla preparazione casalinga del kefir.

Ho preparato una quantità modica di sauerkraut, utilizzando un cavolo e anche una piccola barbabietola rossa, che ha dato un bel colore viola al prodotto finale. Infine, ho aggiunto anche dell'alga kombu. Due patate del mio orticello costituiscono il terzo ingrediente della mia versione della jota.

Ci sono molte versioni di questa zuppa tradizionale, semplici come quella che ho preparato io e più ricche, come quella che ha preparato Frank, che comprendono l'utilizzo di maiale. La ricetta che ho usato come guida è su questa pagina. Per cuocere i fagioli secchi ho usato la mia solita ricetta (vedi sotto).

Ingredienti:

• 100g di fagioli borlotti secchi (mi rendo conto che il Paul's mix in Italia non si trova)

• 2 spicchi di aglio, pelati e schiacciati
• olio d'oliva
• cumino in polvere
• sale fino
• pepe macinato fresco
• 2 patate

In una pentola far scaldare dell’olio e far rosolare l'aglio fino a doratura, quindi eliminarlo. Aggiungere i crauti e coprirli a raso con dell'acqua (io ho usato 120 ml). Aggiungere un pizzico di cumino e pepe e poi far consumare a fuoco lento l'acqua per circa 1/2 ora. Controllare che non si secchi, nel qual caso aggiungere altra acqua. Non ho aggiunto sale dal momento che i cavoli acidi sono salati. La prossima volta sciacquerò i cavoli prima di utilizzarli per provare la differenza.

In un’altra pentola, scaldare i fagioli con il loro liquido di cottura e 120 ml di brodo, poi aggiungere le patate pagliate a pezzetti. Cuocere per 15 minuti, fino a quando le patate sono morbide. Togliere dal fuoco e passare fagioli e patate con un frullatore ad immersione, più o meno a seconda della consistenza che si preferisce. Aggiungere la purea ai crauti preparati in precedenza e mescolare bene. Aggiungere brodo o acqua alla zuppa fino ad ottenere la densità desiderata. Correggere sale e pepe a piacere e servire ben calda (magari accompagnata da crostini di pane).

La ricetta originale prevede l'aggiunta di un roux aromatizzato all'aglio. Io ho saltato questo passaggio e invece ho aggiunto due spicchi d'aglio invece di uno all'olio dei cavoli acidi.

La jota ha un sapore davvero interessante, decisamente influenzato dai cavoli acidi.Ne ho gradita una quantitàmodica, come nella foto. La prossima volta che la proparo proverò a sciacquare i cavoli acidi prima di utilizzarli, come suggerisce di fare Frank. Non posso dire che la mia jota fosse molto acida, ma essendo questa la mia prima esperienza non ho un termine di paragone. Quindi, certamente questa è una storia che continua nella puntata successiva.

We are approaching the end of zucchini season. Pretty soon we will switch from summer squashes to winter ones, marking the transition to a new fall season. But before that happens, try this  nice soup with zucchini and fresh red onions. The recipe makes a fairly large batch: if you have some leftover soup, you can freeze it for enjoyment later in the year.

The idea for this soup came to me one day that I had three rather large zucchini that would be a bit too watery for other uses. When in doubt, I roast vegetables in the oven to concentrate their flavor, and that is what I did with those zucchini, together with a nice torpedo onion from Green Fire Farm (growers of many wonderful vegetables, including stunning leeks).

The roasted vegetables give some depth to the flavor of this soup, which includes a few other ingredients, as you see in the list:

• 1 1/2 lb. (680 g) zucchini, cut in half lengthwise
• 10 oz. (285 g) torpedo onion or other fresh red onion, cut into 1/4-inch (6 mm) thick rounds
• Olive oil
• Fresh thyme leaves
• Half a leek, about 2 oz. (56 g): I like to use the medium green part of a leek for this
• One large or two small garlic cloves, thinly sliced
• A small potato, scrubbed well, halved and sliced
• A small piece of seaweed (alga), optional (I used a 2-inch / 5 cm piece of dulse)
• 3-4 cups (710-950 ml) homemade light chicken stock (or vegetable alternative)
• Water, as needed
• A generous squeeze of lemon juice
• Sea salt and freshly milled black pepper, to taste
• Kale blossoms, optional

Preheat the oven to 400 F. Place the zucchini, cut side up, and the onion rounds on a baking sheet lined with a silicone baking mat. Spray some olive oil and distribute some thyme leaves on the surface. Put in the oven and check after 30 minutes to make sure the onion is not burning. If it looks fine, put back in the oven for another 5 minutes or so. Let cool slightly, so you can handle the vegetables without worry. Cut the zucchini halves in 1-inch long pieces.

Warm up some olive oil in a soup pot. Wash carefully, halve and cut into thin half-moons the leek, then add to the hot oil, together with some more thyme leaves. Stir well to coat. After a few minutes, add the garlic and stir. After a couple more minutes, add the roasted vegetables, potato and seaweed (if using). Stir well, then add the stock and enough water to just cover the vegetables.

Bring to a boil and simmer for 25 minutes (this time should be enough to cook the potato, but check by smashing it with a spoon on the side of the pot: cook a bit longer, if necessary). Remove from the heat and add the lemon juice. Purée using an immersion blender,  if possible. If you use a food processor, purée in batches and use extreme care. Add more water, as needed, to make the soup reach the desired consistency. Adjust salt and pepper to taste.

Since I use an immersion blender to purée the soup soon after it is ready, by the time I finish seasoning it, it is still hot. At this point, I throw into it a big handful of kale blossoms and cover the pot. The residual heat in the soup is enough to soften the blossoms and by the time I reheat the soup to serve it, they are tender to perfection. Making the soup at least a few hours before you are planning to serve it will give it enough time to rest and ripen.

Don't worry if you don't have kale blossoms: simply top the soup with some toasted pumpkin seeds (semi di zucca) or add cooked grains to it to make it a bit more substantial.

To contrast the dark green of the soup for the photo, I sprinkled some garlic chive flowers (fiori di erba aglina) on the top. They are really pretty and as they are edible, once the photo-op was over, I just folded them into the soup.

Final note: in this soup I am using a piece of dulse to add flavor and nutrients to the soup. I will soon have the chance to talk a bit more about seaweeds and how I am incorporating them in my dishes. Indeed, there is a nice story behind the dulse I mention in the recipe.

zuppa di zucchine e cipolle rosse arrosto

Siamo quasi al termine della stagione delle zucchine, ma prima della fine, provate a fare questa zuppa con zucchine e cipolle rosse fresche.

L'idea per questa zuppa mi è venuta un giorno che avevo tre grosse zucchine che erano un po' acquose. Quando non so bene che fare, io cuocio le verdure in forno per concentrarne il sapore e questo ho fatto con le zucchine, insieme ad una bella cipolla di Tropea. (Naturalmente io non ho usato la vera cipolla di Tropea, ma spero che voi possiate farlo: è così buona!)

Le verdure arrosto danno profondità al sapore di questa zuppa la quale comprende alcuni altri ingredienti, come potete leggere qui di seguito.

Ingredienti:

• 680 g zucchine, tagliate a metà per lungo
• 285 g cipolla lunga di Tropea o altro tipo di cipolla rossa fresca, tagliata a fette spesse 6 mm
• olio d'oliva
• foglie di timo fresco
• mezzo porro (56 g circa): in questo caso, io uso la parte verde del porro
• 1 grosso spicchio d'aglio tagliato fino, o 2 piccoli
• una patata piccola, pulita bene, tagliata a metà e poi a fettine
• un piccolo pezzo di alga, facoltativa (io ho usato 5 cm di dulse)
• 710-950 ml di brodo di pollo leggero o vegetale fatto in casa
• acqua, q.b.
• una generosa spruzzata di succo di limone
• sale e pepe nero macinato fresco, a piacere
• germogli di cavolo riccio, facoltativi

Scaldare il forno a 205 C. Disporre su una lastra da forno rivestita con un tappetino di silicone per forno le zucchine con la parte tagliata verso l'alto e le fette di cipolla. Spruzzare dell'olio e spargere delle foglie di timo sulla superficie. Infornare e cuocere per mezz'ora, poi controllare che le cipolle non siano bruciacchiate. Se non lo sono, rimettete in forno per altri 5 minuti. Far intiepidire le verdure e poi tagliare le zucchine a pezzi di 2,5 cm.

Tagliare i porri a metà per il lungo e poi a mezzelune fine. Sciacquare bene in un colapasta. Scaldare dell'olio d'oliva in una pentola da zuppa e aggiungere i porri e dell'altro timo. Mescolare bene, lasciare cuocere per alcuni minuti, poi aggiungere l'aglio e mescolare. Dopo un paio di minuti, aggiungere le verdure arrosto, la patata e l'alga (se usata). Mescolare bene, poi aggiungere il brodo e abbastanza acqua da coprire appena le verdure.

Mettere il coperchio e portare a bollore, poi regolare il calore per mantenere un leggero bollore. Cuocere per 25 minuti, o fino a quando i pezzi di patata siano morbidi (cioè potete schiacciarli con il dorso di un cucchiaio di legno contro la parete della pentola).

Togliere la pentola dal fuoco, aggiungere il succo di limone, poi ridurre le verdure a purè con il minipimer. Aggiungere acqua quanto basta per ottenere una zuppa della consistenza desiderata. Regolare sale e pepe. A questo punto, la zuppa è ancora bollente. Aggiungere i germogli di cavolo riccio e coprire la pentola. Il calore residuo ammorbidisce e germogli e quando riscaldate la zuppa per servirla, troverete che sono cotti alla perfezione. Non preoccupatevi se non avete i germogli di cavolo riccio: potete servire la zuppa decorata con dei semi di zucca tostati, oppure aggiungervi dei cereali cotti per farne un piatto sostanzioso.

Preparare la zuppa almeno alcune ore prima che dobbiate portarla in tavola le dà abbastanza tempo per riposare e maturare.

Per contrastare il verde scuro della zuppa, per la foto ho usato dei fiori di erba aglina, che sono molto carini. E siccome sono commestibili, dopo aver finito con la foto li ho mescolati alla zuppa.

Nota finale: in questa zuppa uso un pezzo di alga dulse per insaporire e aggiungere elementi nutritivi. Presto avrò l'occasione di parlare ancora delle alghe e di come le incorporo nei piatti che preparo. E c'è una storia carina dietro la dulse che ho usato nella ricetta.

There is no wrong that a good homemade chicken soup can't right. And even without a wrong to make right, a steaming bowl of chicken soup brings a smile to the steamed face.

This soup has three elements:

• chicken stock/broth, the making of which gives you also some boiled chicken
• beans
  
• pasta all'uovo (egg pasta) cut into short tagliatelle

And the three elements can be made at different times and then brought together. Once they are available, putting together the soup requires a short amount of time.

How to make stock/broth
What I call stock/broth is made not only with the trimmings and carcass of a roasted chicken, but also a bag of trimmings I buy from the same provider of the chicken, Shakefork Community Farm. Besides selling whole chicken, they sell breasts and thighs sepately so they have trimmings that they bag and sell for stock. These trimmings have some meat attached, so I call what I make with them stock/broth to indicate that more meat than usual goes into its preparation. (In the past, I have asked our local grocery store for chicken trimmings and I got something similar.) The recipe I use is the same as for chicken stock. I also use a vegetable trimmings to make stock and stock/broth like dark green portion of leeks, corn cobs (what's left after you remove the kernels), roasted pumpkin or winter squash skin (what's left after you scoop out the pulp), etc.

Once the stock/broth is ready, I retrieve all the meat which at this point separates easily from the bone. This step, for which I use my hands, requires a bit of care to avoid leaving in the meat small pieces of bone. The meat has enough flavor to go well into a soup. Plus there is no way I'd discard it. I let the strained stock/broth rest in the refrigerator overnight, skim the fat at the top, then freeze some and use the rest in the following few days.

The beans come from my usual provider, mentioned several times before, more recently in this photo post.

How to cook dry beans
The way I cook beans for further use comes from Vegetarian Cooking for Everyone by Deborah Madison (Beans with Aromatics). After soaking half a cup of dry beans for several hours or overnight in enough water to cover them by about an inch (I use two cups), empty the whole bowl into a saucepan and add

• Half of a small onion (or a quarter of a medium one), halved
• A bay leaf
• A small clove of garlic, sliced
• A couple of sprigs of fresh parsley

Bring the water to a lively boil quickly, and keep it there for five minutes, then turn down the heat and let the beans simmer, covered, until they are ready. How long this takes depends on the type of beans and their freshness. Let them cool in their broth, then remove the aromatics and discard them. Let the beans rest in their cooking broth until ready to use.

The third element is pasta all'uovo. I make a small batch of it  using one egg, as in this recipe, then cut it into a sort of short tagliatelle.

All together now
Ingredients:

• 2 cups homemade chicken stock/broth (prepared as explained above)
  
• 1 cup of chicken pieces retrieved once the stock/broth has cooled
• 1/2 cup speckled bayo beans, or other beans of choice (prepared as explained above), and their cooking liquid
  
• A small batch of pasta all'uovo made using one egg and cut into 1/2-inch wide and 2-3 inch-long strips
• 2 tablespoons fresh parsley, finely chopped
• sea salt and freshly milled pepper, to taste

Add the chicken and the beans and their liquid to the stock/broth and bring to a simmer, while you cook the pasta in salted boiling water. It will take just a few minutes to cook. Drain the pasta and add to the soup. Add some hot water or stock/broth to bring the soup to the desired consistency. Turn off the heat, sprinkle parsley on the soup, give it a good stir and serve immediately.

Of course, you can make this recipe with chicken broth and pieces of cooked chicken you have on hand. The basic idea is to create a nice soup with leftovers and items often discarded before fully used.

Fresh fava beans and English peas (a.k.a., garden peas) were among the purchases I made last Sunday, at the Temescal Farmers' Market (Oakland, CA). By the time I had finished my shopping, I had already decided they would be married in a soup. I had to laugh aloud, considering how much I disliked both fava bean soup and pea soup, when my mother prepared them.

It wasn't only that I did not like either legume, but that I also had to shell them, a task hardly enjoyable for a child or teenager. Now, I don't mind doing it and since I don't like the skin of fava beans (which was the reason why I did not like the soup made with them), I also remove that.

The soup I made was inspired by this Tuscan recipe for onion soup on the Accademia Italiana della Cucina site (in Italian). In my soup, the balance of ingredients is different, so the result is a spring legume soup where the flavor of the fresh legumes shines brightly.

Print-friendly version of briciole's recipe for minestra di fave e piselli

Ingredients:

• 1 1/4 lb. [570 g] fresh fava beans
• 1 lb. [450 g] fresh English peas
• olive oil
• 8 oz. [225 g] red onion (cipolla rossa), finely chopped
• 2 scallions, sliced into thin rounds
• 1 celery rib (costa di sedano), finely chopped
• 1 carrot (carota), scrubbed and chopped
• 1.5 cup [355 ml] homemade light chicken stock or vegetable option
• 1 cup [240 ml] water
• 4-5 basil leaves, slivered
• sea salt and freshly milled black pepper
• slices of rye bread (pane di segale), or of other bread of choice
• freshly grated fiore sardo

Shell peas and fava beans. Blanch fava beans for one minute, drain them and plunge them into a bowl of cold water. Drain them again and then remove the skin from the beans to bring their bright green core to light. Set aside.

Warm olive oil in a soup pot and add onion and scallions. Stir to coat and let cook for a few minutes. Add carrot and celery, stir and cook for 5-7 minutes, stirring often. Add the broth and water, cover, bring to a boil, then lower the heat and gently cook for 20 minutes, until the onion is soft.

Add the peas and basil, and cook for 5 minutes, then add the fava beans. Cook until the legumes are tender to your liking. Taste after 5-7 minutes and evaluate how much more time is needed. Adjust salt and pepper. When the soup is almost ready, toast the bread and line the bottom of soup bowls. Pour hot soup over the bread and let sit for a minute, then sprinkle cheese on the soup and serve immediately.

This soup is totally worth the effort needed to prepare the legumes.

Al Temescal Farmers' Market (Oakland, CA) domenica scorsa ho comprato fave e piselli freschi. Non mi ci è voluto molto per decidere che avrei fatto sposare i due legumi in una minestra. Mi è venuto da ridere, considerando quanto detestassi sia la minestra di fave che quella di piselli che preparava mia madre.

Il problema non era solo che non mi piacevano i due legumi, ma che toccava a me sgranarli, un compito non proprio divertente per una ragazzina. Adesso la cosa non mi dispiace affatto e dal momento che non mi piace la buccia delle fave (il motivo per cui non mi piaceva la minestra di fave), tolgo anche quella.

Per la minestra che ho preparato mi sono ispirata a una ricetta toscana per una minestra di cipolle che ho trovato sul sito dell'Accademia Italiana della Cucina. Nella mia minestra l'equilibrio degli ingredienti è diverso e il risultato è una minestra di legumi primaverile nella quale splende il sapore dei legumi freschi.

Ingredienti:

• 570 g fave fresche
• 450 g piselli freschi
• olio d'oliva
• 225 g cipolla rossa, tagliata a pezzetti
• 2 cipolle verdi, tagliate e rondelle fini
• 1 costa di sedano, tagliata a pezzetti
• 1 carota, tagliata a pezzetti
• 355 ml brodo di pollo leggero fatto in casa, o brodo vegetale
• 240 ml acqua
• 4-5 foglie di basilico
• sale fino e pepe macinato fresco, q.b.
• fettine di pane di segale o di altro pane a scelta
• fiore sardo macinato fresco

Sgranare piselli e fave. Sbollentare le fave per un minuto, scolarle e versarle in acqua fredda. Scolarle di nuovo e sbucciarle.

Scaldare dell'olio d'oliva in una pentola e aggiungere i due tipi di cipolla. Mescolare e far cuocere alcuni minuti, poi aggiungere carota e sedano, mescolare e lasciare cuocere per 5-7  minuti. Versare il brodo e l'acqua nella pentola. Coprire, portare ad ebollizione e poi cuocere a fuoco dolce per 20 minuti, fino a quando la cipolla sia tenera.

Aggiungere i piselli e il basilico a pezzetti, e cuocere a fuoco dolce per 5 minuti, poi aggiungere le fave. Cuocere fino a quando i legumi siano teneri in accordo al vostro gusto. Assaggiare dopo 5-7 minuti e valutare quanto tempo sia ancora necessario. Condire con sale e pepe a seconda del gusto. Quando la minestra è quasi pronta, tostare il pane e disporlo sul fondo dei piatti da minestra. Versarci sopra la minestra bollente e lasciar riposare per un minuto, poi spargere del formaggio sulla superficie e servire immediatamente.

Questa minestra ripaga dello sforzo necessario per preparare i legumi.

Our tour of the 20 regions of Italy organized by Trattoria MuVarA brings us to Toscana (Tuscany). Though I like Firenze (Florence) and have been there many times, my favorite Tuscan city is Siena, which I featured in this post written after our most recent visit. (Siena is relatively close to my home town of Perugia.)

Siena was the second Italian city my (now) husband visited with me and we both have vivid memories of that occasion. I have always liked the famous Piazza del Campo, but seen my husband's jaw drop when, at the end of a narrow street, the view opened upon it, was a reminder of just how unique the place is.

To prepare something in honor of Tuscany, I went to my wish list and got to the letter "r", where I found ribollita, the famous Tuscan soup. The word ribollita literally means "boiled again." One day you make a pot of soup, then you add bread slices. The day after, you reheat it and it becomes ribollita. There is a bit more to it, but that is the basic idea.

In her cookbook Cucina Povera, Tuscan Peasant Cooking, Pamela Sheldon Johns has a recipe for ribollita that includes a timetable suggesting what to do with the soup on day 1 through 4. Here you can read Sheldon Johns' headnote and recipe, here is the version given by Kyle Phillips, and here is the version by Frank of Memorie di Angelina. Finally, this is the recipe on the Accademia Italiana della Cucina site: it is in Italian, but I am putting the link here anyway, so you can see that no quantity is given for any of the ingredients.

I never had ribollita when visiting Tuscany, which freed me from memory-based constraints. I had the intention to stay close to the tradition, but in the end I took liberties, so, I decided to call the soup I made for the event "ribollita-inspired." However, by using some things I had in the vegetable crisper (mostly from my vegetable patch), I was true to a philosophy that is dear to my heart: you use up everything you have, trying to turn it into something flavorful and healthy.

As part of my most recent grain CSA share, I received some local dry pinto beans  and decided to try them: most recipes I read use cannellini beans, while one uses zolfini beans (I have some of those, but that's a story for another day).

At the farmers' market, I found fava bean leaves (foglie delle fave), also called fava greens, which I had never tasted and had to try so I used those instead of cavolo nero (a.k.a., dinosaur, Tuscan, or black-leaf kale).

Once again, I make no claims about my rendition, but the spirit is there. This being a popular dish, recipes tend to be family-based and also seasonal. And in true popular cuisine style, I didn't weigh anything, so the recipe is a list of ingredients — which makes me laugh since such a behavior used to upset me when I asked my mother for one of her recipes.

Note: the non-leafy vegetables are cut into small pieces, a mix of sliced and diced, while the leafy vegetables are sliced into ribbons. In the list of ingredients I indicate this as "chopped."

1. olive oil
2. 1/4 large onion, chopped
3. 2 scallions, sliced into thin rounds
4. 1 large carrot, chopped
5. 1 small celery rib, chopped
6. 2 garlic cloves, minced
7. 2 small icicle radishes, chopped
8. a bunch of chard stalks, chopped (left over and/or from ingredient #15 below)
9. a mix of herbs (e.g., chopped parsley, leaves of thyme, chopped rosemary needles)
10. 1/2 cup dry pinto beans, cooked as explained in this post
11. 4 cups homemade light chicken stock, or vegetable alternative
12. 1 medium-small cabbage, divided into six wedges and shredded
13. water as needed
14. 1/4 lb. fresh fava bean leaves, chopped
15. a handful of greens for braised mix (chard, kale, mustard greens, etc.), thick ribs removed where necessary, chopped
16. sea salt and freshly milled black pepper, to taste
17. a squeeze of lemon juice
18. bread of choice: I baked this rye bread (without flowers but with caraway seeds), because I thought it would go well with the soup (and I was right); slices of country-style bread, possibly Tuscan (saltless) bread, are traditional

Warm olive oil in a soup pot (a terracotta pot is ideal, but I don't have one — yet) and add onion and scallions. Stir to coat and let cook for a few minutes. Add carrot and celery, stir and cook for a few minutes. Add garlic, then radishes and chard stalks (or whatever you want to use here) and finally the herbs. Let cook for a few minutes and in the meantime, mash the beans.

The recipes I have read instruct you to drain half the beans, and set those aside, then to mash the rest with the cooking liquid. I mashed all the beans in their broth, using a potato masher (so the result was not smooth), then added everything to the soup pot.

Next, pour the broth into the pot and then add the cabbage. Pour some water as well, but not quite to cover, since the cabbage will shrink as it cooks. Cover the pot, bring to a boil and cook gently for 50 minutes or so, until the cabbage is tender. Add the leafy greens, bring back to a boil and cook gently for 10 minutes or so, until everything is nice and just perfect in texture. Season with salt and pepper to taste.

You can serve the soup at this point, by itself (as in the photo above), or ladled in bowls in which you have previously put a layer of thin bread slices. If you do the latter, cover each bowl and keep warm. Let the bread soak up the broth for 15 minutes or so, then serve. In this case, we can call it minestra di pane (bread soup). You can skip this part and go for the ribollita stage.

Put a layer of bread slices in another pot (again here, a terracotta one would be great), and pour soup on it. Depending on how much soup you have, make another layer of bread plus soup. Let the bread soak up the broth for several hours or overnight. When you want to serve the soup, reheat it. If you want a less dense soup, add a bit of water. Gently stir while reheating (this will break the bread), then serve hot with a bit of olive oil drizzled on top.

The splash of green in the top photo is a sort of pesto I made with the leftover fava bean leaves. It is not necessary of course, but it looks nice, doesn't it? The soup was excellent in all versions.

Siena è la seconda è che mio marito ha visitato con me. Vedere i suoi occhi pieni di meraviglia al nostro arrivo a Piazza del Campo mi diede un senso ancora più intenso di quanto sia bella.

Per preparare un piatto in onore della Toscana, ho consultato la mia lista d'attesa e alla letter "r" ho trovato ribollita, la famosa minestra Toscana. L'idea di base è la seguente: il primo giorno si prepara una pentola di minestra. Poi si aggiungono delle fette di pane. Il giorno dopo, si riscalda e diventa ribollita.

Non ho mai mangiato la ribollita quando sono stata in Toscana, il che mi ha reso libera di fare un po' quello che volevo. Sono partita con l'idea di rimanere vicina alla tradizione, ma alla fine ho fatto di testa mia, in base agli ingredienti che avevo a disposizione (in gran parte provenienti dal mio orticello) e quindi ho chiamato la mia minestra "stile ribollita."

Nella mia cassettina di granaglie più recente ho trovato dei fagioli pinto e ho deciso di usarli, invece dei cannellini. (Una ricetta che ho visto usa i fagioli zolfini, che ho e che userò quanto prima.)

Al farmers' market ho comprato un sacchetto di foglie delle fave, che avevo visto l'anno scorso ma non avevo ancora provato e le ho usate invece del cavolo nero.

Presumo che in Toscana ogni famiglia abbia la propria ricetta per la ribollita. La mia è tradizionale nello spirito, nel senso che utilizza ingredienti di stagione e di produzione locale. Da notare anche che la ricetta sul sito dell'Accademia Italiana della Cucina non specifica le quantità degli ingredienti: come vedrete, io farò altrettanto.

Nota: le verdure non a foglia sono tagliate a pezzetti, mentre quelle a foglia sono tagliate a nastri. Nella lista degli ingredienti, utilizzo per tutte l'aggettivo "tagliate."

Ingredienti:

1. olio d'oliva
2. 1/4 cipolla grossa, tagliata a pezzetti
3. 2 cipolle verdi, tagliate e rondelle fini
4. 1 carota grossa, tagliata a pezzetti
5. 1 piccola costa di sedano, tagliata a pezzetti
6. 2 spicchi d'aglio tritati
7. 2 piccoli ravanelli ghiacciolo, tagliati a pezzetti
8. una manciata di coste, tagliate a pezzetti (avanzate e/o dall'ingrediente numero 15 qui sotto)
9. un misto di erbe (per es., prezzemolo tritato, foglioline di timo, aghi di rosmarino tritati)
10. 1/2 tazza (120 ml) di fagioli pinto o cannellini, cotti come spiegato in questo post o come fate di solito
11. 4 tazze (950 ml) brodo di pollo leggero fatto in casa, o brodo vegetale
12. 1 cavolo cappuccio medio-piccolo, diviso in 6 spicchi e tagliato a nastri fini
13. acqua, q.b.
14. 120 g foglie delle fave, tagliate a nastri
15. una manciata di verdure a foglia (bietola, cavolo nero, cavolo riccio, ecc.), costa centrale rimossa, se necessario, tagliate a nastri
16. sale fino e pepe macinato fresco, q.b.
17. un po' di succo di limone
18. pane a scelta: io ho fatto questo pane di segale (senza i fiori ma con semi di cumino tedesco), perché pensavo che sarebbe stato perfetto con la minestra (e avevo ragione); tradizionalmente si usa il pane toscano

Scaldare dell'olio d'oliva in una pentola capiente (possibilmente di terracotta) e aggiungere i due tipi di cipolla. Mescolare e far cuocere alcuni minuti, poi aggiungere carota e sedano, mescolare e lasciare cuocere alcuni minuti. Aggiungere aglio, ravanelli e coste (o le verdure che volete usare qui) e le erbe aromatiche. Lasciare cuocere per alcuni minuti e nel frattempo schiacciare i fagioli.

Le ricette che ho consultato dicono di scolare la metà dei fagioli e metterli da parte e di schiacciare o ridurre in purè il resto nel loro brodo. Io ho schiacciato tutti i fagioli nel loro brodo usando questo tipo di schiacciapatate, quindi il risultato non era omogeneo, e ho aggiunto tutto insieme alla minestra.

Versare il brodo nella pentola e poi aggiungere il cavolo. Versare dell'acqua, ma non fino a coprire del tutto, dal momento che il cavolo cuocendo diminuirà di volume. Coprire la pentola, portare ad ebollizione e cuocere a fuoco dolce per circa 50 minuti, fino a quando il cavolo non sia tenero. Aggiungere le verdure a foglia, riportare a bollore e cuocere a fuoco dolce per circa 10 minuti, fino a quando tutto sia ben cotto e piacevole al palato. Condire con sale e pepe a seconda del gusto.

A questo punto potete servire la minestra da sola (come nella foto qui sopra) oppure versarla in piatti fondi nei quali avete messo uno strato di fettine di pane tagliate fine. Se fate questo, tenete in caldo i piatti. Fate riposare un quarto d'ora circa e poi servire. In questo caso, la minestra di verdure si può chiamare minestra di pane. Potete saltare questo passaggio e andare diritto alla ribollita.

Disporre uno strato di pane in fondo ad un'altra pentola (possibilmente di terracotta) e versarci sopra della minestra. A seconda di quanta minestra avete, fare un altro strato di pane e minestra. Lasciar riposare per diverse ore o durante la notte. Quando volete servire la minestra, riscaldatela. Se preferite una minestra meno densa, aggiungere un po' d'acqua. Mescolare con delicatezza mentre la minestra si scalda, poi servire ben calda con un pochino d'olio spruzzato sulla superficie.

Il tocco di verde brillante nella foto in alto è una specie di pesto che ho fatto con le foglie delle fave che mi sono avanzate. Non è necessario, ma ci sta bene, non credete? La minestra è eccellente in tutte le versioni.

The second region we are visiting as part of the Italian tour recently started in Valle d'Aosta, is Trentino Alto-Adige. This time, I cannot rely on personal memories to say something, because I have been to Trentino Alto-Adige only once, many years ago and have no photos to share.

I am also not knowledgeable about the cuisine of this region beyond a dish I described twice on the blog (here and here): canederli, or knödel, which are gnocchi made with pane raffermo (bread that is a day or two old). I therefore consulted the tome La Cucina: The Regional Cooking of Italy for enlightenment and inspiration. There, I found two recipes for barley soup, one from Trentino and one from Alto-Adige. I have hull-less barley (which is whole grain) from my grain CSA and my husband likes it a lot, so it was an easy choice. My rendition takes some ingredients from the recipes to make a rather minimalist soup. The result was nice and considering that I used ingredients I normally have available (for example, the herbs grow in my little garden), this is a soup that can be easily made whenever I feel like.

Ingredients:

• 1/2 cup hull-less barley, rinsed well [the original recipes use pearl barley]
• 2 cups (homemade) chicken broth, or vegetarian option
• 3 cups water, or as needed
• olive oil
  
• 1/2 large onion (6 oz. / 170 g), finely chopped
• 1 celery ribbed, finely chopped
• 1 carrot, chopped
• 1 potato, peeled and diced small (optional, see below)
• 1 small sprig rosemary (2 inches long)
• 1 sage leaf (salvia)
• 1 small sprig of fresh marjoram (maggiorana)
• sea salt and freshly milled pepper, to taste
• 1 cup cooked canario or white beans
• 1 tablespoon minced parsley (optional, see below)
• freshly grated Montasio (or other hard cheese of choice), to taste

Warm up a skillet over medium heat. Toast the barley in the skillet, shaking the skillet or stirring the barley with a wooden spoon to prevent it from getting scorched. After a short while, the popping starts. Keep shaking the skillet or stirring the barley until the popping subsides (not all the groats will pop).

Pour broth, water and barley in a soup pot. Bring to a boil and cook, covered, for half an hour. In the meantime, warm up an oiled skillet and place onion, celery and carrot in it. Cook on medium-low for about ten minutes. Empty skilled into the pot and add the three aromatic herbs, plus the potato, if using. Add water, if needed to obtain a soup of the desired consistency. Bring back to a boil and cook, covered, for half an hour or until barley and vegetables are soft. Remove sage leaf and the two sprigs. Add beans and parsley (if using) and cook for another couple of minutes until the beans are heated. Serve hot with grated cheese sprinkled on each bowl.

The recipes in the cookbook include potatoes, but I decided to forgo them and instead I enriched the soup with beans I had just cooked. You can certainly use both. The recipes also include parsley, which I decided to use, but adding it at the end. I then forgot all about it until after I had taken the photo. I added it to the soup still in the pot.

After having a bowl for lunch, my husband asked for another bowl for dinner. However, I didn't try to take a photo in artificial light, so the soup in the photo above is the parsley-less version. Both are excellent.

Addendum. The question regarding hulled barkey from tigerfish (see comment) prompted me to add the following notes, which first appeared in the post on fava bean and barley soup.

Hulless (or hull-less) barley is a type of barley in which the tough inedible outer hull adheres losely to the kernel, so that when this barley is harvested, the outer hull usually falls off. Because hulless barley requires minimal cleaning, most of the brand and endosperm is left intact and the germ is present.

Hulled barley is barley that has been minimally processed to remove only the tough inedible outer hull.

Either type of barley is whole grain (integrale) and therefore a healthy choice.

La seconda regione che visitiamo nel giro d'Italia che abbiamo cominciato in Valle d'Aosta è il Trentino Alto-Adige. Stavolta non ho ne' foto ne' memorie da condividere: sono stata solo una volta in Trentino e non ho visto praticamente nulla. Insomma, ci devo tornare. Sono stata anche allo Stelvio a sciare un'estate di molti anni fa, ma siamo saliti dal versante lombardo.

Sono anche piuttosto ignorante per quanto riguarda la cucina di tale regione, al di la dei canederli, or knödel, dei quali ho parlato in precedenza (qui e qui). Pertanto, per il mio contributo all'evento, ho consultato il librone La Cucina: The Regional Cooking of Italy (versione per il pubblico americano delle ricette che si trovano sul sito dell'Accademia italiana della cucina) per trovare ispirazione. Nel libro ho trovato due ricette per la minestra d'orzo una del Trentino e una dell'Alto-Adige. La scelta è stata immediata, dal momento che ho dell'orzo mondo che ottengo come parte della mia cassettina dei cereali e a mio marito piace molto. Questo tipo di orzo, a differenza di quello perlato usato nelle ricette che mi hanno ispirato, è integrale. E lo preparo in un modo un po' particolare.

Per la mia versione di questo piatto ho preso diversi ingredienti dalle due ricette e ho preparato una minestra piuttosto minimalista. Il risultato è buono e considerando che gli ingredienti che ho usato sono di solito a mia disposizione (per esempio, le erbe crescono nel mio orticello), questa è una minestra che posso facilmente rifare quando voglio.

Ingredienti:

• 100 g orzo integrale (orzo mondo), sciacquato con cura
  
• 500 ml di brodo di pollo o vegetale fatto in casa (se possibile)
• 700 ml acqua, o quanto necessario
• olio d'oliva
• mezza cipolla grossa (170 g) tagliata a pezzi piccoli
• una costa di sedano tagliata a pezzi piccoli
• una carota tagliata a pezzi piuttosto piccoli
• una patata pelata e tagliata a dadini (facoltativa, vedi sotto)
• un rametto di rosmarino (5 cm)
• una foglia di salvia
• un rametto di maggiorana
• sale fino e pepe nero macinato fresco
• 250 ml di fagioli cotti (per es., cannellini)
• un cucchiaio di prezzemolo tritato (facoltativo, vedi sotto)
• Montasio grattugiato fresco (o altro formaggio a scelta), a piacere

Tostare l'orzo
Scaldare una padella su fuoco medio e versarci l'orzo. Scuotere la padella o muovere l'orzo con un cucchiaio di legno per evitare che i chicchi brucino. Dopo un po', col calore i chicchi cominceranno a scoppiettare. Continuare a muovere la padella o l'orzo fino a quando lo scoppiettio diminuisce (non tutti i chicchi fanno "pop").

Preparare la minestra
Versare brodo, acqua e orzo in una pentola da minestra. Portare a bollore e cuocere, coperta, per mezz'ora. Nel frattempo, scaldare una padella con un po' d'olio e aggiungere cipolla, sedano e carota. Cuocere a fuoco medio-basso per circa 10 minuti. Versare il contenuto della padella nella pentola e aggiungere le tre erbe aromatiche e la patata, se utilizzata. Aggiungere acqua, se necessario, per ottenere una minestra della consistenza desiderata. Riportare a bollore e cuocere, coperta, per mezz'ora o fino a quando orzo e verdure sono morbidi. Togliere la salvia e i due rametti. Aggiungere fagioli e prezzemolo (se utilizzato) e cuocere per un paio di minuti fino a quando i fagioli siano ben caldi. Servire la minestra molto calda cosparsa di formaggio grattugiato.

Entrambe le ricette ispiratrici comprendono le patate, ma io ho deciso di non metterle e invece ho arricchito la minestra con dei fagioli canario che avevo appena cotto. Se volete, potete certamente usare sia i fagioli che le patate. Le ricette utilizzano anche il prezzemolo, che io avevo in programma di aggiungere alla fine, poi me ne sono dimenticata fino a dopo aver scattato la foto quindi l'ho aggiunto alla minestra che era ancora nella pentola.

Dopo averne mangiato una porzione a pranzo, mio marito ne ha chiesta un'altra a cena, ma non ho provato a fare una foto con la luce artificiale, quindi la foto in alto è della versone senza prezzemolo. Sono buone entrambe.
