- The Home Creamery by Kathy Farrell-Kingsley (watch out for typos on temperature: on page 85, 108 should be 180; on page 67, 120 becomes 110 and I am not sure which one is correct)
- On Food and Cooking by Harold McGee (Chapter 1: Milk and Dairy Products provides a wealth of useful information and it is a pleasant read)
