Last year, a friend of mine gave me a packet of seeds (semi) written in Russian. From the picture and my very limited knowledge of the Cyrillic alphabet, I gathered that the seeds were for white icicle radish (ravanello candela di ghiaccio). I sowed a few and they all sprouted quickly. I thinned the seedlings, adding the harvested leaves to salads. But I didn't choose the right time to pull out the mature radishes, so the harvest was so-so.

The expert gardener who helps me keep my little jungle under control sowed the rest of the seeds and once again sprouting occurred quickly. This time, I did less thinning and decided to let the radishes get just to a baby size and then harvest them. The photo above (taken with my phone) shows my first batch: don't they look cute?

I cut off the top and used it with other greens to make this dish. I then scrubbed the radishes to show them off to the camera. I am not an expert on this root vegetable, so I am not sure how the white icicle radishes' flavor compares to that of other varieties. They are quite peppery (piccanti) and I have read them described as "more hot than mild." I am planning to add them to a root roast.

As I originally explained in this post, frollino is a biscotto di pasta frolla, a cookie made with sweet shortcrust pastry (or sweet tart dough). By taking out the sugar and adding a couple of other ingredients, I have made a savory frollino that works nicely as accompaniment to cheese and spreads or by itself. (On this page, you can find the sweet version of the recipe below.)

Pasta frolla is traditionally flavored with lemon zest, but for this savory version, I decided to use grated orange peel (buccia d'arancia grattugiata). I usually have oranges at home, because I like to make orange salad (I know, I have not yet posted a recipe for this, but don't despair: it will happen, some day). In the savory frollini, I also use dried grated orange peel of which I have a ready supply.

Before using an orange to make something with it that entails discarding the peel, I grate the zest with a Microplane grater and let it dry on a piece of wax paper. When it is completely dry, I store it in a spice jar.

Print-friendly version of briciole's recipe for frollini salati

Ingredients:

• 1 cup all-purpose flour [130 g / 4.6 oz.]
• 1/2 cup whole-wheat pastry flour [65 g / 2.3 oz.]
• 3 oz (6 tablespoons) cold unsalted butter, cut into small pieces [85 g]
• 1/2 teaspoon sea salt
• 1/2 teaspoon freshly milled black pepper (pepe nero) [see Note below]
• grated orange peel from half a medium orange (1 teaspoon if using a Microplane grater) [5 ml]
• 1 large or extra-large egg, lightly beaten in a small bowl
• 2 tablespoons [30 ml] cold yogurt

To decorate the surface

• dried grated orange peel
• freshly milled black pepper

Put the flours, zest, salt and pepper in the food processor and process briefly to mix. Add the butter and pulse a few times, until the mixture has the consistency of coarse meal. Empty the food processor's bowl on your kneading surface. Make a well in the center and pour the egg and yogurt in it. With the help of a fork, incorporate the liquid into the flour mixture.  

Knead lightly just until the dough comes together into a ball (if necessary, add a bit more yogurt), shape it into a thick disk, wrap it in plastic, and put it in the fridge until well chilled.

When you are ready to bake, preheat the oven to 350 F. Line a baking sheet lined with a silicone baking mat or parchment paper. Roll the dough to 1/6-inch thickness (4 mm) and cut using a small (2-inch diameter) biscuit cutter. Distribute the savory frollini on the sheet, leaving at least 1.5 inches between them. Put leftover dough back into the fridge while you finish preparing the first batch. Sprinkle a bit of orange zest and a tiny amount of pepper on the surface of each frollino.

Put the sheet in the oven. Check the frollini after 15 minutes: they are ready when they start to color and the bottom is light golden. If they need more time, carefully monitor them, as they can easily become overbaked. Cool them on a wire rack. The frollini rise and shrink slightly during baking. Roll and cut the second batch while the first is baking, then decorate and bake them after the first batch is done.

Note: the idea of adding pepper to my savory frollini comes from the Salt-and-Pepper Cookies I described in this post. I am using a lot less pepper than that recipe, though, because of the overall result I want to achieve.

Togliendo lo zucchero e aggiungendo un paio di ingredienti a una delle mie ricette per pasta frolla, ho preparato un frollino salato che funziona bene come supporto a formaggio e creme da spalmanre ma anche da solo. (In questo post, c'è la versione dolce della ricetta qui sotto.)

 L'aroma tradizionalmente usato nella pasta frolla è la buccia di limone, ma per questa versione salata ho usato quella d'arancia. Di solito ho delle arance a casa perché mi piace fare l'insalata di arance (prima o poi scriverò la ricetta in un post). Nei frollini salati ho anche usato la buccia d'arancia grattugiata secca, della quale tengo un barattolino a portata di mano.

Prima di usare un'arancia in una preparazione che richiede lo scarto della buccia, io grattugio la buccia con un Microplane e la faccio asciugare bene su un pezzo di carta oleata. Quando è ben secca, la conservo in un barattolino di vetro da spezie.

Ingredienti:

Preparare la pasta frolla con i seguenti ingredienti:

• 130 g farina bianca
• 65 g farina integrale per torte
•  85 g burro freddo tagliato a pezzetti
• mezzo cucchiaino (2,5 ml) di sale fino
• mezzo cucchiaino (2,5 ml) di pepe nero macinato fresco [vedi Nota in fondo]
• scorza grattugiata di mezza arancia media (un cucchiaino [5 ml] se usate una grattugia Microplane)
• un uovo
• 2 cucchiai (30 ml) di yogurt freddo

Per decorare la superficie

• scorza grattugiata d'arancia secca
• pepe nero macinato fresco

Preparare la pasta frolla con gli ingredienti nella lista. Lavorare giusto il necessario per creare un impasto compatto. Se necessario, aggiungere un po' di yogurt. Schiacciare l'impasto a formare un disco spesso, avvolgerlo nel fil di plastica e farlo riposare in frigorifero fino a quando sia ben freddo.

Scaldare il forno a 175-180 C. Stendere la pasta frolla fino ad uno spessore di 4-5 mm e ricavare i frollini salati usando una formina rotonda di 5 cm di diametro. Disporli su una lastra da forno foderata con tappetino di silicone per forno o carta da forno in modo che ci siano diversi centimetri di spazio tra un frollino e l'altro. Riporre la pasta frolla avanzata in frigo. Spargere un po' di buccia grattugiata d'arancia secca e giusto un'idea di pepe nero macinato sulla superficie dei frollini.

Cuocere in forno controllando di frequente che i frollini non diventino scuri. Io metto il timer a 15 minuti e poi seguo da vicino il resto della cottura. I frollini salati sono pronti quando sono appena coloriti e il sotto è dorato. Togliere dal forno e trasferire i frollini su una griglia. I frollini salati lievitano e si restringono leggermente durante la cottura. Stendere e tagliare il resto della pasta frolla mentre la prima mandata di frollini salati è in forno, poi decorate e infornate quando quella è pronta.

Nota: l'idea di aggiungere del pepe nero alla pasta frolla viene dai Salt-and-Pepper Cookies che ho descritto in questo post. Io uso molto meno pepe per ottenere il risultato che desidero (che è diverso).

A short while ago, I wrote a post titled fatto a mano con amore (handmade with love), where I described an initiative by TypePad to connect bloggers involved in making things with their hands.

In the post, I mentioned Molly, an artist and teacher in Seattle, whose blog (subtitled Artist's Journal) includes pages showing her beautiful illustrations, bird and landscape paintings, and prints. After "meeting" online, Molly and I corresponded and organized a little exchange: I sent her one of my handmade journals and she sent me one of her prints and a card. Neither knew the content of the package until she opened it: we gave each other a nice surprise.

The print I received from Molly will be framed, but I took a photo of it before it is put under glass. In Molly's own words:

Tree Swallows is a woodblock print... I printed on one of my favorite printmaking papers: Magnani Pescia blue — I love that color, and used water-soluble inks. I carved two woodblocks, one for each color. I saw those swallows perching at Union Bay Natural Area in Seattle...

Indeed, the blue color of the paper is really nice.

The scientific name of the Tree Swallow is Tachycineta bicolor. In Italian, the bird (uccello) is called rondine arboricola americana (or rondine arboricola bicolore).

There is a popular saying in Italian: una rondine non fa primavera, literally "one swallow does not make a spring," meaning that one instance of an event (such as the arrival of a single bird) does not necessarily indicate a trend. I have read that in English there is the similar saying: "one swallow does not a summer make." Molly's print has three swallows, and in any case, looking at the little birds gives me a feeling of spring regardless of the number.

A couple of quick notes: When we talk about rondine in Italy, we refer to rondine comune, Barn Swallow (Hirundo rustica). And La rondine is an opera by Italian composer Giacomo Puccini.

The card Molly sent me (a reproduction of a relief print she made) also has birds on it: cardellini (Goldfinches).

And while swallow has a connection to opera, goldfinch has a connection to painting: Raffaello's Madonna del Cardellino.

I have been following Molly's blog and looking at hers and her students' work since we've met. I am already inspired and we'll see where this will lead me.

In the meantime, outside the kitchen, I am working on another artist's book, and my friends Christine of Christine Cooks and her husband got a preview of it a few days ago. More details will follow.

With this post, I am starting an exploration of traditional dishes from the various regions of Italy in the company of other bloggers. We start from the north-west corner of the country, a small region called Valle d'Aosta (Aosta Valley), whose capital is Aosta.

I visited Aosta Valley twice, once with my high school class and more recently, with my husband. We stayed a few days in Courmayer, at the foot of Monte Bianco (Mont Blanc), and one day we took the funivia (cable car) to the Aiguille du Midi (you can then go down to Chamonix, on the French side, but we didn't do that). Below are a few images I took that day (the originals are slides).

It was an amazing experience, especially the last portion, traversed inside a cozy egg-shaped car that stopped at regular intervals leaving you suspended in the deep silence of the mountains. This page shows the cable car route and this page has more photos of the spectacular trip.

To find a recipe representative of Aosta Valley, I turned to the Accademia della Cucina Italiana site and chose to prepare my rendition of the trota al vino rosso di Saint-Pierre. I have recently baked trout several times, so I was interested in trying a different recipe for a fish (pesce) I have always liked. I adapted the original recipe to use one trout instead of four, though the trout I bought weighed one pound, so it was fairly large. The English version of the recipe is available in the book by the Academy called La Cucina: The Regional Cooking of Italy. I did not have the wine called for, so I used red wine from Sonoma County (California). Also, I did not have time to prepare the recipe again before the deadline for the event, so I am adding a note pertaining plans for the future.

Ingredients:

• a trout, cleaned  [see Note 1 below]
• olive oil
• a small onion, minced
• half a large carrot, finely chopped
• a couple of sage leaves (foglie di salvia), thinly sliced
• the needles of a small rosemary sprig (rametto di rosmarino) (about 2 inches), minced
• 1/2 cup leftover roasted potatoes, diced (optional) [see Note 2 below]
• a cup of red wine, slightly warmed
• sea salt and freshly milled black pepper to taste

Note 1: the trout I bought weighed 1 lb and did not fit well in the largest skillet I had. The next time I make this dish, I will get two smaller trout (3/4 lb or so each) and double the amount of the other ingredients.

Note 2: I had some leftover roasted potatoes, cut into bit-sized pieces and decided to add them to the other vegetables, after dicing them. This ingredient is not in the original recipe.

Preheat oven to 350 F. Rinse trout and pat dry. Sprinkle a bit of salt and pepper inside and outside. Warm up olive oil in a skillet large enough to contain the trout. Choose a skillet that can go in the oven. Add onion, carrot and herbs, stir well and cook until the vegetables are soft, stirring often. Add the potatoes and stir, then add the trout. When it begins to brown, pour the wine over it. Turn up the heat to medium and cook for five minutes, then place the skillet into the oven to complete the cooking (about 15 minutes). The trout is ready when the flesh flakes easily with a fork.

Remove skin, debone the trout and serve with the vegetables.

Con questo post, comincio un'esplorazione di piatti tradizionali delle regioni italiane in allegra compagnia (vedi sotto). Partiamo dalla Valle d'Aosta e il suo capoluogo, Aosta.

Sono stata in Valle d'Aosta due volte, in gita con il liceo e più recentemente con mio marito. Abbiamo alloggiato a Courmayer, ai piedi del Monte Bianco e un giorno abbiamo preso la funivia per l'Aiguille du Midi. Qui sotto ci sono alcune immagini della salita (le originali sono diapositive).

È un'esperienza incredibile, specialmente l'ultimo tratto che si fa in piccole cabine che si fermano ad intervalli regolari lasciandoti in sospeso nel silenzio profondo delle montagne. Questa pagina mostra il tragitto della funivia e questa pagina mostra delle foto del tragitto.

Per trovare una ricetta tradizionale della Valle d'Aosta ho consultato il sito dell'Accademia della Cucina Italiana e ho scelto di preparare una versione personale della trota al vino rosso di Saint-Pierre. Ho adattato la ricetta originale per una trota, che comunque pesava quasi mezzo chilo. Non avendo a disposizione il vino di Saint-Pierre, ho usato un rosso di Sonoma County (California). Non ho tempo di rifare la ricetta prima della scadenza dell'evento, quindi ho aggiunto una nota riguardante il progetto per la prossima volta.

Ingredienti:

• una trota, pulita  [vedi Nota 1]
• olio d'oliva
• una cipolla piccola tritata
• mezza carota grossa tagliata a dadini piccoli
• un paio di foglie di salvia tagliate sottili
• gli aghi tritati di un rametto di rosmarino (lungo 5 cm)
• patate arrosto avanzate tagliate a dadini (facoltative) [vedi Nota 2]
• 240 ml di vino rosso leggermente scaldato
• sale fino e pepe nero macinato fresco, a piacere

Nota 1: la trota che ho comprato pesava mezzo chilo e non entrava bene nella padella più larga che ho. La prossima volta che preparo questa ricetta, utilizzerò due trote più piccole (massimo 350 g l'una) e raddoppierò la quantità degli altri ingredienti.

Nota 2: Avevo poche patate arrosto (più o meno una patata tagliata a dadi) e ho deciso di aggiungerle, dopo aver tagliato i pezzi a dadini. Questo ingrediente non è compreso nella ricetta originale, ma ci sta bene.

Scaldare il forno a 180 C. Sciacquare la trota e asciugarla. Scaldare l'olio in una padella grande abbastanza da contenere la trota e che poi può andare in forno. Aggiungere cipolla, carota ed erbe aromatiche e mescolare bene. Cuocere fino a quando le verdure sono tenere, mescolando spesso. Aggungere le patate e mescolare, poi adagiare la trota nella padella. Quando è dorata, versarci sopra il vino. Cuocere a fuoco medio per cinque minuti e poi passare in forno per terminare la cottura (15 minuti circa). La trota è pronta quando la carne di sfalda facilmente.

Togliere la pelle, deliscare e servire la trota con le verdurine.

In past years, I have tried two or three different recipes to make risotto alle fragole, but was never satisfied with the result, so I changed course and developed a recipe for risotto ai lamponi. But the basket of strawberries that I brought back from a recent visit to the Temescal farmers' market, ispired me to give risotto alle fragole another try, and this time the result was good. I am not yet ready to post the recipe, so for now you'll have to be satisfied with only a photo. Update: the recipe is in this post (with a small change from the version shown in this photo.)

What are you reading now? I am reading Emma by Jane Austen. I had read it some years ago, but after watching the BBC adaptation of it, I decided to read it again. I did the same with Sense and Sensibility and Pride and Prejudice. What can I say? I love Jane Austen.

As you can imagine based on the logo on the left, today I am announcing a new edition of Novel Food, the culinary/literary event that Lisa of Champaign Taste and I started in the fall of 2007.

Lisa is taking a break from blogging, and I am honored to be carrying the torch.

Every edition of Novel Food is a little voyage of literary discovery, as you learn about literary works new to you, and it is also a delightful banquet made up of the literary-inspired dishes contributed by the event's participants.

I hope you will join the party. I am looking forward to learning about a published literary work (a novel, novella, short story, memoir, bio, poem, etc.) that provided you with culinary inspiration.

Here are the simple rules for participating in Novel Food:

1. Prepare a dish of your choosing that has a connection to a published literary work (novel, novella, short story, memoir, bio, poem).
2. Publish a post about it on your blog by the end of Sunday March 18, 2012 (midnight, Pacific Time), referencing the Novel Food event. Include a link to this announcement. If you wish, you can use the Novel Food logo.

In recent months, I have talked about chocolate-covered pecans and pistachios, so you may think that I am in a chocolate-covering spree, but what I am describing here actually predates my experiments with nuts. A couple of years ago, one morning, I woke up with the idea of dipping pieces of roasted red beets into melted chocolate. I dismissed such flight of fancy, but it would not go away, so I followed it and charmed many people with the result. This year, on Valentine's Day (giorno di San Valentino), I realized the idea again (slightly differently) and I am sharing it here.

Please, suspend your disbelief. The combination of red beet and chocolate is used in cakes like this one, so why not pair just those two ingredients?

These hearts are easy to make and quite pleasant to eat. And as chocolates go, they are rather healthy:

• dark chocolate, in moderation, is good for us
• there is no added sugar
• the core is made of a root vegetable.

My small heart-shaped cookie cutter is perfect for this use, as it makes bite-sized hearts (it is 1.5 inch long and 1.5 inch wide).

Ingredients:

• red beet(s), unpeeled, rinsed and scrubbed well
• good quality chocolate that you know is already tempered (like bars made for eating): I use about 2/3 chocolate with 70% cocoa content and 1/3 chocolate with 60% cocoa content

Preheat the oven to 375 F. Wrap beet(s) in foil, place on a baking sheet, and bake until easily pierced with a knife. Let cool until easy to handle, then slip off the skin. Cut into 3/8-inch thick slices and carved out bite-sized hearts using a small heart-shaped cookie cutter. Set aside the leftover for salad, soup or risotto.

Note: If you are like me and prefer to buy bunches of beets with their greens still attached, cut the greens an inch above the beet, then proceed with the preparation. I usually bake a number of beets at a time, for efficiency's sake. There are many ways you can use them, besides the one described here (for example, this soup or this spread). I also set aside the greens to make a frittata or to add to kale in this dish. And I prepare the stalks in this way.

Melt the chocolate according to the instructions in this article (see also quote below). You'll need a good thermometer that gives you the required accuracy. It is very important that you chop the chocolate finely. Put the chocolate in a small non-reactive metal bowl placed over a pan with steaming (not boiling) water. Make sure the bowl does not touch the water and that no water gets into the chocolate. Melt as directed, checking the temperature regularly:

Stir constantly until about two-thirds of the chocolate is melted. Take the bowl from the heat and continue stirring until all the chocolate is melted. For dark chocolate, you want the whole mass to end up at 89 to 91 F (87 to 98 for milk and white).

Line a plate or baking sheet with wax paper. Spear a red beet heart with a toothpick (stuzzicadenti) and dip it into the melted chocolate. Lift it out and let excess chocolate drip a bit, then drop the heart onto the wax paper. Dip the tip of the toothpick into the chocolate and drop a tiny bit of it to cover the hole left by the toothpick on the surface of the heart. Repeat until you run out of red beet hearts or of chocolate.

Don't waste any of the chocolate: when you are down to just a little bit, use a piece of bread to scrape the bottom of the bowl clean (fare la scarpetta).

Let the chocolate set well, then remove the hearts from the wax paper and enjoy. As you bite, the thin layer of chocolate gives way of the soft red beet and the flavors of the two meld well in your mouth. A lovely treat.

In questi ultimi mesi ho parlato di noci pecan e pistacchi ricoperti di cioccolato, quindi potreste pensare che sono preda di una piccola fissazione, ma in realtà quello che descrivo in questo post precede di diverso tempo i miei esperimenti con la frutta secca. Un paio d'anni fa, una mattina mi sono svegliata con l'idea di intingere nel cioccolato fuso pezzi di barbabietola rossa cotta al forno. Ho tentato di convincermi che era un'idea un po' troppo strana, ma dal momento che non mi lasciava in pace l'ho realizzata e ho incantato molte persone col risultato. Quest'anno, per San Valentino ho realizzato di nuovo l'idea (in modo solo leggermente diverso) e ora la condivido sul blog.

Per favore, non siate increduli. Il connubio barbabietola rossa e cioccolato è usato in torte come questa qui, quindi perché non unire questi due ingredienti da soli?

Questi piccoli cuori sono facili da preparare e un piacere da mangiare. E rispettano la salute:

• il cioccolato fondente in moderazione fa bene
• non contengono zucchero aggiunto
• il "ripeno" è fatto di una radice salutare.

Il piccolo stampino per biscotti a forma di cuore che ho è perfetto per questo uso poiché produce cuori di 3,8 cm: insomma, dei bocconcini.

Ingredienti:

• barbabietola rossa intera
• cioccolato di buona qualità in tempera (come le barrette pronte da mangiare): io uso 2/3 di cioccolato con 70% di cacao e 1/3 di cioccolato con 60% di cacao

Scaldare il forno a 190 C. Pulire bene la barbabietola (o barbabietole), avvolgere in pellicola di alluminio, porle su una lastra da forno e cuocerle in forno fino a quando è facile perforarla con una lama. Lasciar intiepidire e poi rimuovere la buccia. Tagliare a fettine di 1 cm di spessore e usare lo stampino per ricavare dei cuoricini. Mettere da parte gli avanzi per un'insalata, zuppa o risotto.

Nota: Se siete come me e preferite comprare barbabietole con ancora attaccate le foglie, tagliate i gambi 3 cm sopra alla radice e poi proseguite con la preparazione. Di solito cuocio un certo numero di barbabietole per volta, per amor di efficienza. Potete usarle in diversi modi, a parte quello descritto in questo post (per esempio, questa zuppa o questa crema da spalmare). Io utilizzo le foglie per fare una frittata o insieme al cavolo riccio in questo gratin. E gli steli li preparo in questo modo.

Fondere il cioccolato secondo le istruzioni in questo articolo (vd. anche la citazione qui sotto, traduzione mia). Avrete bisogno di un termometro accurato. È importante che tagliate il cioccolato finemente. Mettere il cioccolato in una ciotola di metallo non reattivo posta sopra una pentola con acqua che produce vapore (ma non in stato di ebollizione). Assicurarsi che la ciotola non tocchi l'acqua calda e che nemmeno una goccia d'acqua finisca sul cioccolato. Fondere come da istruzioni, controllando spesso la temperatura:

Mescolare in continuazione fino a quando 2/3 circa del cioccolato sono sciolti. Rimuovere la ciotola dal calore e continuare a mescolare fino a quando tutto il cioccolato sia sciolto. Se usate cioccolato fondente, la massa deve avere una temperatura tra 31,7 e 32,8 C.

Foderare un piatto o una lastra da forno con della carta oleata. Infilare uno stuzzicadenti nel centro di un cuore di barbabietola rossa, sollevarlo e immergerlo nel cioccolato fuso. Farlo emergere, aspettare qualche secondo che il cioccolato in eccesso scoli e poi depositare il cuore sulla carta oleata. Intingere la punta dello stuzzicadenti nel cioccolato e poi far cadere una goccia di cioccolato sul buco lasciato dallo stuzzicadenti sulla superficie del cuore in modo da coprirlo. Ripetere fino all'esaurimento di cuori di barbabietola o di cioccolato.

Non sprecate il cioccolato che rimane in fondo alla ciotola: fate la scarpetta!

Lasciar riposare fino a quando il cioccolato si è ben solidificato, poi togliere i cuori dalla carta oleata e gustarli. Quando si dà un morso al cioccolatino, lo strato di cioccolato si spezza facilmente e lascia spazio alla morbida barbabietola rossa e i due sapori si combinano bene in bocca in una dolcezza sfiziosa.

The wonderful young women who own the Cafe (and its younger sister, Beachcomber 2, in Bayside) decided in early 2008 to forgo paper cups. Customers who cannot, or prefer not to, sit down to enjoy their drink on the premises bring their own mug or purchase a mason jar (which is, of course, totally reusable). The system works beautifully.

Black and White Wednesday is on hold while Susan takes some time off to focus on her health. I had prepared this post for week #28 of the event. Following on the footsteps of Brii and Haalo, who last week published a photo for Susan (here and here), I am publishing this post as a special card for Susan.

The photo was shot in color and then I played a bit with the black and white setting in Photoshop to get the two light sepia photos.

yogurt for breakfast: yogurt + fruit + nuts = a flavorful and healthy combination

Breakfast option #1: homemade plain, non-fat yogurt, diced baked pear (pera), chopped toasted pistachios (pistacchi). My husband does not use any sweetener. Sometimes I add toasted pecans instead of pistachios.

To prepare the pear, preheat the oven to 350 F. Wash a ripe but firm pear (e.g., Bosc) and cut into 1/4 inch thick slices lengthwise. Take the slices that include some of the core, cut each in half lengthwise and carve out the core. Distribute on a baking sheet lined with a silicone baking mat and bake for 10-15 minutes (depending on pear variety). Let cool, then dice. Depending on the size of the pear, you may not use it all, in which case, do not dice the leftover slices until needed. (You can add diced baked pear to a lunch or dinner salad.)

Variation on option #1: cooked cracked oats (or oatmeal) at the bottom, then yogurt (a smaller quantity than in the original option), fruit and nuts as above.

Breakfast option #2: homemade plain, non-fat yogurt, sliced kiwi (kiwi), blueberries (mirtilli), chopped toasted pistachios. Again, no sweetener added.

I have started making yogurt at home only recently: there was no reason to prevent me, really. I just never decided to try. Then, one day, I did — using this culture. The process is straightforward and the result quite pleasing. (I will talk more about yogurt making in a future post.)

Yogurt entered my life when I was about 18 and has never left it, in the sense that I have been eating yogurt pretty much every day ever since. I like it and it is good for my digestive system. Recently, an observational study brought attention to yogurt. In summary, what you eat matters in many ways, including long-term weight gain (or lack thereof). Below is a quote from the paper describing the study and the results:

Relationships between Dietary Changes and Weight Changes
[...] The dietary factors with the largest positive associations with weight changes, per serving per day, were increases in the consumption of potato chips (1.69 lb), potatoes (1.28 lb), sugar-sweetened beverages (1.00 lb), unprocessed red meats (0.95 lb), and processed meats (0.93 lb)... Weight gain associated with increased consumption of refined grains (0.39 lb per serving per day) was similar to that for sweets and desserts (0.41 lb per serving per day). Inverse associations with weight gain, per serving per day, were seen for increased consumption of vegetables (−0.22 lb), whole grains (−0.37 lb), fruits (−0.49 lb), nuts (−0.57 lb), and yogurt (−0.82 lb).

And here is an excerpt from an article on the findings aimed at the public at large:

The data also showed that eating specific high-quality foods was linked with less weight gain over time. In fact, the more daily servings people ate of fruits, vegetables, nuts, whole grains and yogurt, the less weight they gained. The yogurt finding — each extra daily serving prevented 0.82 lbs. of weight gain — was unexpected, Mozaffarian says: "This clearly deserves further attention to determine if this is cause-and-effect and, if so, why."

Finally, this is a short video where the lead author (Dr. Mozaffarian) summarizes the results of the research.

Note that the breakfast options I presented above include servings of three of the foods associated with better outcome: yogurt, nuts and fruit. By adding cracked oats, the variation on option #1 includes also a fourth one, whole grains (cereali integrali).

Per i lettori italiani

 yogurt + frutta fresca + frutta secca lipidica ¹ = un connubio buono e salutare

Colazione numero 1: yogurt fatto in casa, bianco e magro, pera cotta a dadini e pistacchi tostati tritati. Mio marito non aggiunge alcun dolcificante. A volte uso noci pecan tostate invece dei pistacchi.

Per preparare la pera, scaldare il forno a 175-180 C. Lavare una pera matura ma soda (per esempio, Bosc) e tagliarla per lungo a fettine di mezzo centimetro di spessore. Tagliare a metà per lungo le fettine che comprendono parte del torsolo e rimuoverlo. Distribuire su una lastra da forno coperta con un tappetino di silicone per forno e infornare per 10-15 minuti (a seconda della varietà di pera). Far intiepidire e tagliare a dadini. A seconda della grandezza della pera, non la userete tutta, nel qual caso non tagliare a dadini le fettine che rimangono. (Potete farlo dopo e aggiungere i dadini di pera ad un'insalata per pranzo o cena.)

Variazione della colazione numero 1: fiocchi d'avena cotti, poi yogurt (in quantità minore che nella versione originale) poi frutta e frutta secca lipidica come sopra.

Colazione numero 2: yogurt fatto in casa, bianco e magro, fettine di kiwi, mirtilli e pistacchi tostati tritati.

Ho cominciato a fare lo yogurt in casa da poco tempo. Veramente non c'è nessun motivo per non averlo fatto prima. Semplicemente non avevo mai deciso di farlo e poi un giorno ho deciso e l'ho fatto, utilizzando questo mix di fermenti. Il processo è semplice (non uso la yogurtiera) e il risultato buono. (Descriverò in un post futuro come faccio.)

Ho cominciato a mangiare yogurt a 18 anni e non ho più smesso, nel senso che da allora lo mangio praticamente tutti i giorni. Mi piace e fa bene al mio apparato digerente. Di recente, i risultati di uno studio hanno portato l'attenzione sullo yogurt. In breve, quello che mangiamo è importante in molti modi, compreso il lento aumento di peso che si osserva nelle persone andando avanti negli anni o l'assenza di tale aumento. L'articolo che descrive lo studio e i risultati osservati è stato pubblicato sul New England Journal of Medicine. Nella versione in inglese del post ne riporto un paragrafo.

Qui di seguito ho tradotto un paragrafo di un articolo sui risultati scritto per il pubblico non specializzato:

I dati mostrano che il consumo di certi cibi di elevata qualità è legato ad un minore aumento di peso nel tempo. Infatti, più porzioni di frutta, verdura, frutta secca lipidica, cereali integrali e yogurt le persone osservate nello studio hanno consumato e meno peso hanno acquistato. Il dato relativo allo yogurt — ogni porzione giornaliera in più ha prevenuto un aumento di peso di 372 grammi — è stata una sorpresa, dice Mozaffarian: "Questo dato chiaramente merita ulteriori ricerche per stabilite se c'è un rapporto di causa-effetto e, in caso positivo, il perché

Se siete interessati a saperne di più, in questo breve filmato il dr. Mozaffarian, autore principale dell'articolo su NEJM, offre un riassunto dei risultati della ricerca.

Da notare che le opzioni per la colazione che ho presentato comprendono tre delle categorie di cibi menzionati nell'articolo per essere associati ad un risultato positivo: yogurt, frutta fresca e frutta secca lipidica. Avendo i fiocchi di avena, la variazione all'opzione numero 1 comprende anche una quarta: i cereali integrali.

¹ In inglese la parola nuts è un termine generico che descrive noci, mandorle, nocciole, ecc. cioè un sottoinsieme di quella che in italiano chiamiamo frutta secca. Questa pagina fa la distinzione tra frutta secca lipidica e frutta secca glucidica che ho adottato in questo post.
