corn soup with tofu (three's a charm)

A bit more than a year ago, I wrote a post titled non c'è due senza tre (good things come in threes, or three's a charm). On that occasion, the dish I had been making serially was pastiera, a traditional Easter dessert from Napoli. This time, it is corn soup. The first rendition is described in this post and the second here. For my third try, I purchased soft tofu and also shortened the cooking time.
The use of soft tofu and the treatment to be applied to it came from Claudia of Honey from Rock who, as recounted in this post, managed to achieve the spongy texture that had eluded me. I cut two slices from the block of soft tofu (4 oz. total), and froze them. At the farmers' market, I bought four ears of corn (pannocchie di granturco) and made the soup again. Since the recipe is already spread over two posts and I made a couple of small adjustments, I will write here the most recent realization (which may undergo further changes, as I keep making it):
- Remove the tofu from the freezer, place it in a bowl and pour over it boiling water (acqua bollente) until it is well-immersed in it.
- Preheat the oven to 450 F and bake the ears of corn for 20 minutes.
- When cool, remove the husks and silk and use a knife to get the kernels and scrapings.
- Briefly cook a thinly-sliced shallot (scalogno) in warm olive oil (olio d'oliva), then add to it a cup of homemade vegetable stock and cook, covered, for 10 minutes.
- Add the corn, a small Divina potato (patata), peeled and grated, and 1.5 cups of water. (Note: The quantity of water depends on the desired thickness of the soup and the amount of corn obtained from the ears, so adjust it as needed.)
- Bring to a boil and cook, partially covered, for 6-7 minutes.
- Purée the soup with the immersion blender and then push it through a mesh strainer.
- Drain the thawed tofu, pat it dry and slice it (1/8-1/4"-thick), then add it to the soup.
- Bring the soup back to boiling and simmer for 5 minutes, then turn off the heat.
- Shortly before serving the soup, reheat it and add snipped fresh chives (erba cipollina).
- Serve the soup topped with seeded, diced tomato (pomodoro).
This soup has become a household favorite. The soft tofu, treated as described above, has indeed a pleasant spongy texture. My thick corn soup is not the best vehicle for what I was originally trying to achieve (described in this post), as it is not a sauce (salsa).

Per i lettori italiani.Poco più di un anno fa ho scritto un post intitolato non c'è due senza tre. In quell'occasione, la ricetta ripetuta era quella della pastiera. Questa volta si tratta della crema di mais. La prima versione è descritta in questo post e la seconda in quest'altro. Per la terza version ho comprato del tofu di tipo morbido e ho anche abbreviato il tempo di cottura.
L'utilizzo di tofu di tipo morbido e il trattamente a cui sottoporlo per ottenere la consistenza spugnosa vengono dall'esperienza di Claudia di Honey from Rock descritta in questo post. Ho tagliato un paio di fette dal blocco di tofu (in tutto 120 g circa) e le ho surgelate. Al mercato dei produttori ho comprato quattro pannocchie e ho preparato di nuovo la crema di mais. Dal momento che la ricetta è già divisa tra due post e l'ho ritoccata leggermente, di seguito riporto la realizzazione più recente:
- Togliete il tofu dal congelatore, metterelo in una ciotola e versateci sopria dell'acqua bollente fino a sommergerlo.
- Scaldate il forno a 230 C e arrostite le pannocchie per 20 minuti.
- Quando son tiepide, rimuovete foglie e fili, e con un coltello separate i chicchi.
- Cuocete brevemente uno scalogno finemente affettato in olio d'oliva caldo, poi aggiungete 250 ml circa di brodo vegetale fatto in casa, coprite e cuocete per 10 minuti.
- Aggiungete il mais, una patata piccola pelata e grattugiata e 350 ml circa di acqua (Nota: La quantità di acqua dipende dalla densità desiderata per la crema e dalla quantità di mais ottenduto dalle pannocchie, e può essere aggiustata al bisogno.)
- Portate ad ebollizione e cuocete a pentola parzialmente coperta per 6-7 minuti.
- Frullate col mixer ad immersion e passate al setaccio.
- Togliete il tofu dall'acqua e tamponatelo, poi tagliatelo a fettine di 3-5 mm e infine aggiungetelo alla crema.
- Riportate al bollore e sobbollite per 5 minuti, poi spegnete il fuoco.
- Poco prima di servire, riscaldate la crema e aggiungetevi dell'erba cipollina fresca tagliuzzata.
- Servite la crema di mais con sopra dadini di pomodoro fresco.
Questa crema è diventata uno dei piatti preferiti a casa nostra. Il tofu di tipo morbido, pretrattato nel modo descritto sopra, di fatto ha una consistenza spugnosa gradevole. La mia crema di mais, essendo densa, non è il miglior veicolo per l'effetto che originalmente cercavo di ottenere (descritto in questo post), poiché non è una salsa. Ma rimane il fatto che questa è una delle mie minestre preferite di tutti i tempi. Non ho una foto della crema di mais, ma una di cielo e oceano poco dopo il tramonto.
