corn soup with tofu and tomato (second version)

I decided to write an update on my recent post on this subject separately, as the original is already fairly long. While my attempt at obtaining a spongy texture in the tofu was unsuccessful, Claudia of Honey from Rock had her dedication to achieving the desired effect rewarded (in more ways than one, as this post explains: congratulations!). Here are the interesting details of her quest. I am very thankful to Claudia for sharing her experience.
After reading Claudia's post, I decided to try freezing a piece of the tofu I purchased for my first attempt, even though it was of the extra-firm kind. I cut a couple of slices from the block (4 oz. total), and froze them. On Saturday, I bought four ears of corn at the farmers' market and on Sunday, I made the soup again according to the recipe given in my previous post, with the following differences:
- While the sliced shallot was cooking, I took out of the freezer the tofu, placed it in a bowl and poured over it boiling water (acqua bollente) until it was well-immersed in it.
- I stopped cooking the corn and potato after 10 minutes, puréed the soup with my immersion blender and pushed it through a mesh strainer (as before), then put it back in the pot.
- I drained the thawed tofu, patted it dry and sliced it (1/8"-thick), then added it to the soup.
- I brought the soup back to boiling and simmered for 10 minutes, then turned off the heat, because dinner time was still a few hours away.
- Shortly before serving the soup, I reheated it and added snipped chives (erba cipollina) from my small herb garden.
I served the soup, as before, topped with diced tomato, and once again, it was excellent, with an intense corn flavor. The tofu had definitely a different texture, softer, spongier — though still not as spongy as what I have in mind after reading the relevant passage in The Last Chinese Chef. I am starting to think that my corn soup is not the best vehicle for what I am trying to achieve, as it is not a sauce (salsa). However, before giving up on my original idea, I will try once again, this time using soft tofu, as Claudia did. Update: you can read about my most recent try in this post.
I don't have a nice photo of the second version of my corn soup with tofu and tomato, so I am posting a photo I took at the farmers' market with my new camera, with which I am slowly becoming familiar.

Per i lettori italiani. Ho deciso di scrivere separatamente l'aggiornamento al mio recente post sull'argomento, perché l'originale è piuttosto lungo. Il mio tentativo di ottenere tofu dalla consistenza spugnosa non ha avuto successo, mentre Claudia di Honey from Rock ha visto premiata la sua dedizione all'ottenimento dell'effetto desiderato (come potete leggere in questo post). Qui potete leggere i dettagli della sua ricerca. Ringrazio Claudia per aver condiviso la sua esperienza.
Dopo aver letto il post di Claudia, ho deciso di surgelare un pezzo del tofu che ho comprato per il mio primo tentativo, anche se è del tipo extra-compatto. Ho tagliato un paio di fettine (120 g in totale) e le ho surgelate. Sabato ho comprato quattro pannocchie di granturco al farmers' market e domenica ho preparato di nuovo la crema di mais in base alla ricetta descritta nel post precedente, con alcune differenze:
- Mentre lo scalogno cuoceva, ho tolto il tofu dal surgelatore, l'ho messo in una ciotola e ci ho versato sopra dell'acqua bollente fino a coprirlo bene.
- Ho interrotto la cottura di mais e patata dopo dieci minuti e li ho ridotti a crema col mixer ad immersione, li ho filtrati col passino e poi ho messo la crema nella pentola.
- Ho tolto il tofu dall'acqua e l'ho asciugato, poi l'ho tagliato a fettine spesse 3 mm e l'ho aggiunto alla crema di mais.
- Ho portato ad ebollizione e ho cotto lentamente per 10 minuti, poi ho spento il gas, perché non era ancora ora di cena.
- Poco prima di servirla, ho riscaldato la crema di mais e ho aggiunto dell'erba cipollina (di produzione propria) tagliuzzata.
Come in precedenza, ho servito la crema di mais con sopra del pomodoro a dadini. Anche stavolta la crema è venuta buonissima, con un intenso sapore di mais. Il tofu aveva una consistenza diversa, più morbida, un po' spugnosa, ma non così spugnosa come ho in mente che deve essere in base al passo del libro L'ultimo chef cinese che mi ha ispirato. Comincio a pensare che la mia crema di mais non sia il veicolo migliore per l'effetto che sto tentando di ottenere, poiché non si tratta di una salsa. Prima di arrendermi, però, proverò ancora, stavolta con del tofu morbido. Aggiornamento: risultato del mio terzo esperimento.
Purtroppo non ho una foto carina della seconda version della mia crema di mais con tofu e pomodoro, perciò vi mostro una foto che ho scattato al farmers' market con la mia macchina fotografica nuova che sto pian piano imparando a conoscere.
